Swedish Sticky Chocolate Cake (Kladdkaka)

Yummy and sticky! I changed out a few tablespoons of sugar for brown. For another great swedish cake try the tuppakaka- also crispy on the top and little gooey in the middle but without the chocolate...

Avocado Ice Cream Sauce

So yummy! I halved the milk and sugar and didn't mash the avocado completely. Mixed it into a good vanilla ice cream and it was delicious! Millions of people consider avocados to be a dessert food, and pumpkin a savory food!

Avocado Dessert

Awesome! In Indonesia we have this all the time in a tall glass cup drizzled first with chocolate sweetened condensed milk and a few ice cubes blended in. You could try just syrup or cocoa and some sweetened condensed milk. Sometimes I like it just with the avocado and other times I stir in the chocolate from the side and bottom of the cup. I thought it was a weird idea, but love avocados so had to give it a try. I'm glad I did, cause it was yummy and refreshing, and not too sweet. And the avocado oil is really good for you. Soemtimes I blend avocado and vanilla icecream (Costco super premium or Haagen-daaz) and refreeze a few minutes if it is a hot day. I leave a few frozen lumps that taste like butter. So good!

Okra, Chicken and Rice Casserole

Love Okra, and LOVE how this recipe has REAL veggies and brown rice. Some of the other recipes have a full days worth of sodium and less than a gram of fiber (2 cans of soup Plus a packet of onion soup mix... plus.... salty crackers or cereal And butter? I feel good serving this and variations with other veggies to my family often. Yes, do up the cook time at least 5 minutes since brown rice cooks so long. And This is great with avariety of veggies- frozen spinach etc. If you want more flavor just add dried or suateed onions, garlic of herbs.

Oatmeal Butterscotch Cookies

Perfection as is. I just made some and I have been eating them fresh out of the oven as as they cool down to a crispy golden outside, and soft and moist inside. I added about 2 Tablepoons of Flour because I wanted to make them without refrigerating the dough first, but it wasn't necesary. Try them as is. They are very sweet, but also amazing. And perfect with milk.

Indonesian Satay

To make the peanut sauce another authentic version, add a little milk and stir it on the stove to thicken it. Also, my Indonesian husband adds a spice packet, that, among other things, has shallot, powered coriander seed and lemon (grass?) in it. Give those ingredients a try for an authentic and unique flavor! When I've eaten satay sitting on the floor of a little on the roadside warung in Indo, they serve it with fresh limes, little green chiles and shallots to chomp on. Taste explosion. By the way it is usually threaded on very thin sticks and about 12 sticks per person on a plate with tons of peanut sauce dripping over it. It is sometimes made with rabbit as well as chicken. Serve with homemade deep fried tempeh yummmmm

Baked Oatmeal II

Just eating this! Wonderful. DO heat milk or half and half with nutmeg and if you want maybe some cloves or cardamom. It really is all each person pouring some hot milk and nutmeg over the oatmeal that makes it. Not sweet enough? provide a little brown sugar or honey on the side, but try it with the hot milk first :) If you are halving the recipe as I did, I would recommend using a large loaf pan or round cake pan. Mine, I spread too thin and some of my goji berries and raisins burned- had to pick them out.

Easy Baked Oatmeal

Baked oatmeal is all about the full fat milk heated with nutmeg and sometimes cloves and cardamom you pour over it! Give it a try and have a little brown sugar or honey on hand for those with a sweet tooth.

Ma Po Tofu

Hi, I live in China and Love Sichuan food "Ma Po Tofu" and "Shui Jiu Niu Rou" are two of my favorites. Sichuan food is known for not just the "la" what we call "spicy hot" but also "ma la" which is the no-so-hot but mouth numbing tingling feeling you can only get from Sichuan peppercorns. They have an amazing flavor- I am Addicted. If you go to a Chinese grocery store ask for "hua jiao" "flower pepper." It is little and round black/brown, sometimes green or other colors. Both syllables are pronounced in the first tone, high, and flat. good luck- it is worth it.... just watch out! try grinding it a little or just fry them in oil and throw them in- THE AROMA...

Peruvian Lomo Saltado

I grew up in Peru and I second third and forth... Cumin! Cilantro! Red onions! For me the Cumin and Cilantro are key. I also like it more cooked quick and hot with plenty of oil. The combination of bold flavors, rich texture and fresh cilantro make me drool. And it is pretty quick to prepare when you get everything chopped. I once had it at a restaurant in the US with sesame oil- I totally didn't expect that but it actually was delicious. For an amazing, unique cold potato/ spicy cheese sauce dish that is unique to Peru, search "papas a la huancaina" on google or yahoo. This dish is a national classic and it highlights the 150 years of Chinese presence in Peru. The cooking method is from the wok stir frys of China. In Peru all peruvian restaurants are called "Chifas" When I lived in China, imagine my surprise when many meals began with the host and hostess telling all of us to chi fan! chi fan! (the "chi" rhymes with fur, but the pinyin way of spelling is chi. " Eat rice! " And in Peru they call fried rice arroz chowfa. Arroz is rice in Spanish. "Chow"fan is fried rice in Mandarin.

Tuppakaka

This is a fabulous cake! It is so easy and simple to make and I love the slightly dense, moist and crackly meringue top. This recipe is pretty exact, and I have found that if I try to mess with this recipe in just about any way, it turns into a normal cake without the moistness and meringue top. When I have changed the bread crumbs or mixed too much air into this recipe, or tried to half this recipe I am ususally dissappointed (I think halving the egg is tough and too much egg makes it dry). But give this cake a try and be exact the first time through. It is Elegant and fabulous alone, or with Breyers French Vanilla Ice cream, Hazelnuts and strawberries on the side

Wonderful Banana Cake

Amazing! Just made this cake with Caramel Frosting VI from this website. To doctor for fun add: rum flavor, vanilla flavor and 1 teaspoon cinnamon to the mix. I also sprinkled some salted and roasted cashews on top, since I made the frosting with unsalted butter. Such a moist and easy cake- I just made it for a girls night and they were all wanting this super easy and yummy recipe!

Curried Cumin Potatoes

Delicious! I have one suggestion. When I was in Nepal a year ago, I watched someone make this recipe, only minus the cilantro (a delicious variation!) and I think with some red pepper. To make the flavor go all the way through the potatoes, she simply fried cut raw potatoes with the spices, and at least 4 Tbls of oil, for about 5 minutes and then added water and then pressure cooked everything together. The flavor went all the way through the potatoes! I have done this with just a covered pot and let it cook longer. Glad this great dish is on the site!
