Roasted Swiss Chard with Feta

Before making this the first time, I read all the reviews and followed some of the suggestions. I added walnuts and a little garlic. I think the walnuts especially added just the right touch. This seems like such a weird combination of ingredients, but it is amazingly good! It's a great way to eat giant bunches of chard in one fell swoop.

Curried Lentils

This was really great! I took the advice of other reviews, and made the following changes: used coconut milk instead of cream of coconut, used curry powder (1.5 tsp) instead of the paste. I also added raisins while the lentils were cooking, and topped with pistachios before eating. The raisins were soft and yummy, and gave it a perfect amount of sweetness! My 1-year-old is a fan. :-)

Quick and Easy Pizza Crust

Wow, this was really easy and so good! I've used pre-made crusts before (like Trader Joe's dough) and have had trouble with them cooking all the way through before the toppings burned. No issue with this one. I let it rise for about 10 minutes while I prepared toppings and grated cheese. It was REALLY easy to spread the dough to the edges of my pizza pan, and it cooked up perfectly chewy/crisp. I used pesto sauce, fresh tomatoes, black olives, and mozzarella cheese. YUMMY!

Mac and Cheese II

This is really good! I added a dash of onion powder to the flour, and I think it added a little depth to the flavor. Also, I wanted a really creamy macaroni, so I didn't bake it at all! After mixing the cheeses with the pasta, I just let it rest for about 10 minutes, and it was the perfect, ultra-creamy consistency.

Buckeye Balls II

I read all the reviews, and tried to cut back on the amount of sugar in the recipe like others suggested. I found that it made the "dough" not firm enough to roll into balls. I used the full 4 cups, and it was perfect! I also added a little paraffin to the chocolate, which made it shiny and perfect. YUM!

Chicken Tortilla Soup I

Delicious! I also found that you can just add chopped avocado to the whole pot at the end, and it holds up just fine. Easier (and less messy) than adding it to each bowl!

Sangria! Sangria!

I left out the cherries and sugar and added a peach. I used 2-Buck-Chuck cabernet sauvignon, which worked just fine. I made 4 batches and let them sit overnight -- this was a HUGE hit at my housewarming party. We ran out in about an hour, and everyone was digging the fruit out of the pitchers. Next time I will add pineapple and maybe other fruits.... great recipe!!

Lavender Shortbread Cookies

Cookies are crisp, but melt in your mouth. Probably all that butter.... I didn't have fresh mint or lavender, so I used 1/2 T. dried lavender and 1 teaspoon dried peppermint. Otherwise, I followed the recipe as written. DELICIOUS with a strong British tea.

Butternut Squash Soup

Bran Flax Muffins

LOVE these muffins! They are healthy (good oil, from the flax seeds) and filling. They also freeze wonderfully -- I make a double batch and keep them in the freezer for handy snacks and breakfast.

Great recipe! Next time I would cut the red pepper in half, as it was piping hot! I even broke out into a sweat while eating it. :-) I also used chicken broth instead of water, and it was nice and flavorful.

Spaghetti Squash I

Used red, orange, and yellow bell peppers, and a red onion. Along with the basil, olives, and feta, this turned into a really colorful (and delicious!) dish. I renamed it "Confetti Squash"!!! Very popular with everyone who tried it.
