Roasted Swiss Chard with Feta
Before making this the first time, I read all the reviews and followed some of the suggestions. I added walnuts and a little garlic. I think the walnuts especially added just the right touch. This seems like such a weird combination of ingredients, but it is amazingly good! It's a great way to eat giant bunches of chard in one fell swoop.

Curried Lentils
This was really great! I took the advice of other reviews, and made the following changes: used coconut milk instead of cream of coconut, used curry powder (1.5 tsp) instead of the paste. I also added raisins while the lentils were cooking, and topped with pistachios before eating. The raisins were soft and yummy, and gave it a perfect amount of sweetness! My 1-year-old is a fan. :-)

Quick and Easy Pizza Crust
Wow, this was really easy and so good! I've used pre-made crusts before (like Trader Joe's dough) and have had trouble with them cooking all the way through before the toppings burned. No issue with this one. I let it rise for about 10 minutes while I prepared toppings and grated cheese. It was REALLY easy to spread the dough to the edges of my pizza pan, and it cooked up perfectly chewy/crisp. I used pesto sauce, fresh tomatoes, black olives, and mozzarella cheese. YUMMY!
