Broiled Parmesan-Lemon Tilapia

I have to post because this dish is delicious!! I hate fish but am on a low carb diet and heard Tilapia is one of the least fishy tasting fish so I was looking for a stellar recipe....this is it!! Thanks to another reviewer who posted this: I too had difficulty finding Sazon in my grocery stores - so I made my own after searching on google, 1 tsp each of: salt, garlic powder, black pepper, paprika, cumin, corriander I followed the recipe and made the seasoning above. AMAZING!!

Cheesy Potato Salad

This is the perfect potato salad, I don't love traditional heavy mayonnaise filled potato salad. This recipe is just the right consistency and creamy. I didn't add the sugar and followed some other reviews by adding 2 sliced stalks of celery and a sprinkling of dill. Delish!

Cake Mix Cookies VIII

Fabulous. I did a batch with Pillsbury Devil Food Cake mix and peanut butter chips. One of the best cookies I've had! The next week tried with a Betty Crocker Devil food cake mix, cookies came out flat and not as good. Go with the Pillsbury. I added 2TBSP oil and 1 tsp vanilla as others suggested. Really just a perfect little cookie.

Grilled Sausage with Potatoes and Green Beans

This is a great dish! I cooked it inside in a roasting pan. Seared sausage first in olive oil to get a nice brown color then moved to roasting pan. In same pan, sauteed garlic, mushrooms and green beans for 5 min in olive oil. Added all ingredients to roasting pan, put a few pats of butter on top and cooked at 425 for 20 min covered with foil then 15 uncovered. Delish!

Spinach Quiche

If you are reading these reviews: trust me, you have to make this quiche. You will not be disappointed, it is so good. I only used 2TBSP of butter, a cube is way too much. I added sweet italian sausage and used fresh spinach and fresh mushrooms. Could only find regular feta. My 7yr old loved it also. Delish!

White Chocolate Snack Mix

This is a pretty good snack, but not as great as I was expecting after all the rave reviews. I made it for video night, next time I'll go with caramel popcorn or something a little more treat like.

Lasagna Alfredo Roll Ups

These are great and easy to make, they will become a staple in my meal planning. I used half broccoli, half spinach and added sauteed mushrooms to the filling. I used store bought alfredo which next time I'll use homemade off this site to make the taste even better.

Cinnamon Sweet Potato Chips

Great healthy alternative to regular chips or good as a vegetable side with your summer BBQ's. Cut slices thinly and as uniform in size as possible for best results. I melted the butter in a bowl mixed in the topping ingredients and stirred in the potato slices instead of brushing it on.

Monkey Bread I

This was a hit at our family Christmas party. Used Texas Buttermilk biscuits. Warm out of the oven and everyone was grapping apart the pieces. Was the best dessert over sugar cookies, fudge, etc.

Spinach and Potato Frittata

This is a pretty good, healthy, easy to make, and your kids will eat it recipe. I added bacon bits while cooking the potatoes, it added some meaty flavor to the potatoes as they do need some extra flavoring.

Russian Mushroom and Potato Soup

This is an excellent soup! Have printed the recipe and put it in my "keeper" box. Followed the recipe exactly and it turned out perfect. My 4 Yr. old daughter even enjoyed it. It is also the perfect soup to take to a sick friend or neighbor. Can't go wrong with this great recipe!

Very good, easy pasta recipe. With so few ingredients and few steps I wasn't expecting anything spectacular but was quite impressed. My 4 yr old daughter loves it which is a bonus when they'll eat something with vegetables.

Zucchini Brownies

These brownies are delish. Moist, good flavor, rich and heavy so cut in small squares. I followed the recipe exactly and they turned out perfect. The frosting is even better than most homemade ones.
