Teriyaki Marinade

This was an easy marinate with most ingredients I had on hand. I didn't have onion flakes, so I used onion powder and it still tastes great! We grilled our chicken, but I'm sure baked would be great too. I'll definitely use it again!

Sausage Casserole

This was really good! Granted, it's loaded with calories, so that may be why! I made it EXACTLY like the recipe said and took it to a volunteer breakfast. Everyone raved over it and asked for the recipe. It was so easy that I'll definitely keep it on hand when I need to feed a crowd.

Jay's Signature Pizza Crust

This was awesome! I reaaaally don't like doing anything involving yeast, but this was super easy. I actually threw all my ingredients in my kitchen-aid mixer with the dough hook, and it worked great. To let it rise, I stuck it outside in our 100+ degree weather in Texas and it finished in about 30mins. Ha! Tasty, easy recipe and I'll never buy pre-made crust again!

Chicken, Spinach, and Potato Soup

This was good! I ended up adding a splash of cream to give it a creamy taste, but it's really good either way. It's not overly seasoned or anything, but it makes a nice comfort meal that my kids will eat too.

Tangy Apple Chicken Loaf

I love this recipe! The first time I made it, I made it exactly like the recipe. It was good, but... I ended up modifying it to taste a little more like a recipe my grandma uses. Everything I kept mostly the same as this recipe, only I use more milk in my own recipe, along with some Worcestershire, garlic, and a few other spices. This recipe is perfect for anyone who needs a healthier version of meatloaf, and it can easily be modified to fit the spices you prefer. LOVE it!

Pineapple Upside-Down Cake VII

Both my husband and I LOVED this recipe. I used fresh pineapple and didn't have any juice, so I made the cake mix with just water, but it was SO good with the fresh pineapple that I'll never do it another way. I used a 10" wilton pan, made sure the pineapple was thinly sliced, and it fit beautifully. My only issue was that I deducted 1/4c of the water because of all the butter on the bottom, and the very middle didn't cook all the way through. Next time I'll be sure to cook a little longer and at a slightly lower temp.

White Chocolate Chip Oatmeal Cookies

My family isn't a big fan of white chocolate, but I had some chips on hand for some odd reason, and we were craving cookies. Oh my goodness, we can't stay out of them! My toddler-age kids never eat cookies with oatmeal, but they LOVE these! The only change I made was that I used almonds, simply because I didn't have any pecans. I bet the pecans would make them even better! We will definitely be making these again, white chocolate and all!

Apple Cheddar Scones

First time to make scones (although I'm an avid baker) and they were AMAZING! I did do some research first and tweaked it a little though. I read on another recipe that the milk, like this one, was too much, so I used only 2/3 cup whole milk (didn't have buttermilk on hand). I also baked at 350 for about 15mins. 450 degrees is WAY to high. I froze the butter and used a hand grater to grate it into the flour mixture and it made the process much easier. Very very good recipe if you use a little less milk and lower temperature.

Chicken Enchilada Soup II

This was a really good recipe! It's about as close as you can get to Chili's, although I admit it's not exact. I worked there for a year about ten years ago and ate it every day, so maybe I'm biased, but the recipe is still really really good and probably is as close as humanly possible.

Zuppa Toscana

Really there's no need to head to Olive Garden every time you're after this soup. I've made this recipe a million times over and you just can't tell the difference in the taste. The great thing about making it at home, is that now that we're eating healthier, it's so easy to modify to fit that. I either leave out the bacon, or just use a few slices, use lo-fat milk instead of cream, and sometimes use 1/2 sausage and 1/2 ground turkey. And FYI, whether you're making it exactly like the recipe or a lo-cal version, spinach is fabulous in place of kale and much easier to find!

Rainbow Veggie Chili

My husband and I are not Vegans, but had been on a voluntary "fast" with our church that had us eating only foods eaten by Vegans, with a few more restrictions. I found this recipe and we both really liked it. Be warned, it is SPICY, but really good. The next time I'd probably cut some of the ingredients that make it so hot, since my kids couldn't eat it, but other than that it's great. I actually served it over brown rice.

Creamy Vegan Corn Chowder

Absolutely amazing!! I'm not a Vegan, but was invited on a "fast" with my church that prohibited foods that weren't on a Vegan diet. It was really hard, but this recipe really squashed a lot of those cravings I had for other foods. I used soy milk, and unless I were to taste chowders side by side, I could NOT tell that it used soy milk (and I don't even LIKE soy milk!). I strongly recommend this recipe to anyone, Vegan or not.

Honey Peanut Granola

Really good! I was on a strict diet and couldn't have sugar, just honey, so I substituted all the sugar for honey, added peanuts, and it turned out great. Next timed I'll add a variety of nuts and dried fruit too.

Cheesy Potato and Corn Chowder

Yum. That about sums it up! I've made it once using velveeta and once using shredded colby/jack. All of us prefer the shredded cheese versus the processed. It's good either way though.

This is great. I've made it a couple times now, although I must admit it tastes more to me like meatloaf. My husband, who has never cared for meatloaf, actually really likes this because it differs from meatloaf in that it's not sweet at all. Definitely a keeper.

Pesto Chicken Florentine

This is great! I was really skeptical about it because of the powdered alfredo sauce mix, since I usually make alfredo sauce from scratch. Me, my husband, and the kids (both toddlers) loved it! I'll actually make it again the same way. Alfredo usually sits heavy on our stomachs, but the powdered mix gave it a lighter flavor. It's definitely a keeper!
