Madeleines II

Elegant perfection! I generously greased & floured my mold. I also used a plastic knife to help remove them.

Garlic Chicken

Reviewed: Nov. 4, 2010
Crispy & moist! I pounded the breasts nice & flat for even cooking/browning. I also upped the garlic. My only regret is not using Italian seasoned breadcrumbs. This recipe is so simple!

Slow Cooker BBQ Pork Chops

Reviewed: Nov. 4, 2010
Super easy & tender! I used Sweet Baby Ray's & boneless pork chops. I put 1/2c. water in the bottom & 1/2c. water on top, as it's a thick bbq sauce. Seven hours on low = perfection!

I tried these with 2 lb red potatoes, no jalapeno & a bag of mixed veggies. They were pretty good.

Tasty BBQ Corn on the Cob

Reviewed: May 24, 2010
These were delicious! I used 1/2 teaspoon each of the onion powder, cayenne pepper, garlic powder, salt & pepper. The corn grilled about 15 minutes. This is a simple & fast way to make a fresh veggie!

Black Bottom Cupcakes I

Reviewed: Jan. 18, 2010
Thanks to the other reviewers for their tips. I omitted the salt, used white vinegar & baked for 20 min. A dusting of powdered sugar was a pretty finishing touch. Great to make when you need to use up a brick of cream cheese! Easy & tasty!

Beef and Parmesan Pasta

Reviewed: Nov. 10, 2007
Dee-lish!!! VERY basic ingredients & quick prep, too. I didn't have any zucchini, but it still came out tasty! That's why this recipe is so versatile - you can change or omit veggies & use whatever pasta you have on hand (just adjust cooking time accordingly.)

Uncle Mac's Peanut Butter and Jelly Cookies

Reviewed: Aug. 30, 2006
VERY tasty, but extremely soft. Even when cooled, they fell apart easily. Next time, I'll increase the baking time. Maybe that'll harden them up a bit. The ingredient list is so short & simple! It's great to be able to make such yummy cookies without butter or even margarine. Conclusion - gooey, yet delicious!!!

Spanish Squash

Reviewed: Jul. 4, 2006
I loved this dish! I didn't drain the tomatoes & I served it over white rice. Next time, I'll use Spanish rice for even fuller flavor. I'll also increase the spice amounts & include some zucchini. Simple & yummy!

Creamy Cajun Shrimp Pasta

Reviewed: Jan. 15, 2006
VERY tasty:-) I substituted McCormick's Steak Rub for the cajun seasoning & it turned out great! However, when adding the seasoning to the skillet, you must only combine it with the butter until a paste forms - DO NOT COOK FOR 5 WHOLE MINUTES! If you did that before adding any liquid, it would result in a burn (this should be obvious to anyone over 10, no biggie, just adjust!). Easy prep, a short ingredient list & yummy flavor make this a wonderful recipe!

I only made the meatball part of this recipe (in my own sauce) and they turned out great! Also, the prep was easy and quick.
