American Lasagna

Very good recipe. I used veggie beef crumbles instead of beef, and I added about a half cup of shiraz, but I imagine any red wine would compliment the sauce beautifully. Will make again. Thanks!

Ultimate Maple Snickerdoodles

Amazing cookie--I went out to find neighbors to try them because they were so good! I was more than a little generous with the maple syrup in the batter; I think I may have put almost 4 tablespoons in. They were mapley enough for me. It's important to remember that most pure maple syrups have a very subtle flavor, so it won't have a strong "maple" taste if you're using the real thing instead of imitation stuff. But there's nothing better than the real thing, in my opinion. I didn't have maple sugar, but took an earlier reviewer's advice of just using cinnamon and nutmeg, and I felt like I didn't lose anything. I also cut the amount of sugar in half that I used to roll the dough balls in, 1/4 cup is more than enough. Such soft cookies! Definitely a make-again.

Yellow Squash Casserole

The recipe came out a little bit eggy for me, but the white wine was a nice touch for a squash casserole; I liked that combination. It also improved as leftovers, which is an additional plus. Very easy. Thanks for the recipe!

Red Pepper-Salmon Pasta

I wasn't wild about this dish. My boyfriend loved it though, so it may just be my individual tastes. The sauce just didn't seem to go with a pasta dish in my opinion. It was almost...Mexican. I added cream as well, maybe about 1/4 cup; maybe I would have liked it better if I had added more like some of the other reviewers did. Thanks for the recipe, though!

Broccoli Cheese Soup

Pretty good--will make again, and will try some of the earlier reviewers' suggestions. Particularly curious about an earlier suggestion of replacing the water amount with beer to make beer cheese broccoli soup--I'll try that next time I make it! Make sure to sift out the cornstarch so it disperses evenly through the soup mixture; using that much cornstarch can cause it to clump together. Thanks for the recipe, Karin!

Pesto Polenta Lasagna

Oh, YUM!!!!!!!! This was my first experience making and eating polenta; it's delicious!!! I agree with an earlier review that this would go well with additions, that will be something I'll try next time. I made as is, except I used a canned 5-cheese sauce instead of marinara, and I sprinkled some garlic pepper and rosemary over the cheese before I returned it to the oven. I will DEFINITELY be making this again. Loved it!! Thanks!:)

Chicken Tequila Fettuccini

Yummy yummy. This dish doesn't have to be so time consuming if you organize the preparation. I wish I'd done that myself a little better!! Chopping all the peppers and onion in advance makes a BIG difference. Great for a special occasion meal. I'll be making this again!

Creamy Banana Bread

Loved it! So moist--will definitely make again. Added 1 teaspoon of cinnamon to the batter, and I halved the cinnamon in the streusel topping and replaced it with nutmeg. So good!

Banana Pudding II

Eh--not what I was hoping for. Was kinda yummy when it was warm, but after it cooled, the texture just wasn't what I was expecting. Too....mealy, or something. Will have to keep looking for a banana pudding recipe. Sorry!

Potato Chip Chicken Casserole

Good--I thought it was a little bland, but the boyfriend loved it, so I'll probably be making it again. I made it as is, but added a hefty dose of garlic pepper while I was mixing everything together, and also sauteed my chicken with a splash of white wine to boost the flavor.

Awesome and Easy Creamy Corn Casserole

5 stars both for taste and being so easy! Takes maybe three minutes to get this casserole in the dish and into the oven, and it comes out delicious. Will definitely make again. Great side dish.

Chicken Enchiladas I

Good! I recommend shredding the chicken instead of cubing it--that's how it's usually served in enchiladas that I've had, (and being born and raised in Texas, that's alot of enchiladas!=P). If you can make your own sauce instead of the jarred stuff, even better! I used green bell peppers this time, but I think a nice spicier alternative would be chopped jalapenos. Will make again.

Easy Key Lime Pie I

I'm lucky to be living in South Florida to have access to fresh key limes. This recipe is so simple, and exactly the way key lime pie should taste (and the way it should look--no green food coloring, please!!). If you have access to actual key limes, use them instead of just buying juice at the store, because they really do make a huge difference in the flavor of the pie.

Bourbon Pecan Chicken

The sauce was a little rich for our tastes! I only put in half of the amount of butter for the sauce, and I think that was PLENTY. My boyfriend said he tasted too many strong flavors in the sauce that didn't seem to want to blend, and I tend to agree. However, it was still good (in small amounts!), and the chicken itself was fabulous. I'll definitely make the chicken again with the pecan breading--yum! Thanks for the recipe!

Rich and Creamy Tomato Basil Soup

Absolutely fabulous- everybody just loved it here. Served it with some warm biscuits. Tastes just like the tomato basil soup at a restaurant I love to eat at. Despite the warnings, I did make a few adjustments, like using canned instead of fresh tomatoes. Also, I added the cream to taste, which for me was about a half cup of cream instead of one whole cup. I recommend tasting the soup with 1/2 cup cream before adding the other half. You can always add more, but too much is harder to repair!:)

White Cheese Chicken Lasagna

Pretty good! Messy--but I think worth it. I cooked my chicken with lots of garlic and just a little bit of lemon to help bring out the flavor. I also added two splashes of white wine to the sauce while I was cooking it and used only one package of spinach like some other reviewers here. Next time I think I will use a bit less ricotta cheese because it seemed to be a little overpowering (at least in our dish!), and maybe will try adding some bacon to the chicken like others here have recommended. Thanks for the recipe!

Eggplant Parmesan I

Well, I don't know what to say....I made it for dinner one night and neither my boyfriend or I liked it. However, it was my first time working with eggplant at home, so I might have just done something wrong! I'll probably keep looking for another recipe.
