Ginger Glazed Mahi Mahi

This was absolutely delicious! Didn't have fresh ginger so just used dried and it turned out great. Crumbled the cold leftovers and put them in a salad the next day with romaine, fresh spinach, cherry tomatoes, red onion, sesame sticks and a little balsamic rocked!

Cinnamon-Roasted Almonds

I haven't written a review on AllRecipes in a long time. I'm writing one tonight in an effort to keep myself away from the tray of nuts that just came out of the oven. I can't stop eating them!

Sour Cream Coffee Cake IV

I made this with a few modifications (only because of what I did/didn't have on hand). I used 1/4 c. shortening and 1/4 c. margarine instead of all shortening; I used dark brown sugar instead of light brown sugar for the filling; and I added some pecan pieces to the brown sugar mixture. This was really quite yummy-licious. So yummy-licious in fact, that I ate the entire thing myself, piece by piece by piece, within 24 hours!

Lemon Raspberry White Chocolate Mousse Cake

This wasn't awful or anything, but I wasn't really crazy about it. I did as another poster suggested and only used 1/2 c. cream to melt the chocolate. Everything tasted just fine, but I didn't care for the texture of the mousse after it sat for awhile. Probably won't make again.
