Mexican Baked Fish

This is a nice change from the usual grilled, baked, broiled or pan fried fish. The recipe calls for cod but all I had on hand was tilapia and it worked out great. I imagine any mild fish would work just fine for this recipe. Great as is or tweak to your taste.

Mango Shortbread Bars

This is a great recipe. I nice combination of traditional baking with a tropical flare. It surprises first time tasters that are expecting apple or peaches. As with most deserts this goes great with ice cream (what doesn't right?).

Banana Banana Bread

I was very happy with how this turned out. Very moist and excellent flavor. I had an issue with the sides getting done before the center but it was definitely "operator error".

Slow Cooker Venison Roast

This is an excellent option for venison. Great to start in the morning and even better to come home to later on! Makes the house smell amazing! This is an easy recipe to tweak too depending on your preference in seasoning and you can even add veggies as others have. I've used tougher cuts of venison with this recipe also with great results. Highly recommended!

Ginger Glazed Mahi Mahi

This is one if my favorite fish recipes! I've used it for mahi but I like it even more with salmon. The marinade is wonderful and the sauce you make at the end can be used on anything. In fact my wife told me she'd pretty much eat anything I put that sauce on! I prefer adding corn starch to the sauce at the end rather than cooking it down due to time. Don't use too much or it will turn into a ginger jelly mess. I love this recipe!!!

Roasted Cajun Potatoes

This recipe is a great compliment to almost any entree! It gets rotated into meals pretty often and I like that is uses olive oil instead of vegetable oil. The smell when the potatoes are baking is amazing only overshadowed by the flavor when eating them. I typically use more garlic and sometimes some steak seasoning just because that's my preference. This recipe is perfect as is. Okay, stop reading, go buy some potatoes and give it a try!!!

Maple Salmon

I really like salmon and this is a nice way to prepare it. The flavor is sweet and tangy without overpowering the natural flavor of the fish. Make sure you use REAL maple syrup to get the most out of this recipe. Also don't overcook the fish! It should flake easily while still retaining a little color inside. It's easy to do (trust me, I know) so keep an eye on it. Baking per the recipe is great or you could grill the fish if so inclined. Once again, make sure not to grill it to death! It's a good recipe that's definitely worth a try!

Guacamole

My wife and I LOVE guacamole and this recipe is perfect! The recipe is great as is or you can adjust the ingredients depending on your taste. We use a little less salt, a little more garlic, a little more cilantro and add some diced jalapeno pepper. I also typically add lime juice to taste. Sometimes one lime is too much and sometimes not enough, depending on the size and juiciness of the lime. FYI - a pastry mixer works great for chunking up the avocado. Overall this recipe is AMAZING. If you like guacamole, try this, you won't be disappointed!!!

Quick and Spicy Fish Fillets

My wife, brother in law and I all loved this recipe. My brother in law's actual words were "You could make that again anytime!". I added a few teaspoons of cajun seasoning rather than red pepper and it turned out great. The nice thing is, it's fast. Preparation time is maybe 15 minutes and the cook time is even less. Try it out, you won't be disappointed!
