Classic Peanut Butter Cookies

These cookies were too thin and not peanutty enough. It was a like flat butter wafer. Not impressed.

Thick Chocolate Pudding

This was simple, fast and delicious! It definitely isn't sweet enough... and that's coming from someone who adores dark chocolate. Increase the sugar to 1/2 cup and it's magic! I cooked mine for the first 3 minutes in an 1100 watt oven, then only needed one extra minute to finish it off. Tip: Add a small amount of milk at first to form a ganache, then add the rest. This gives you a smoother and faster blend before cooking.

Chocolate Cornstarch Pudding

This is really 2-1/2 star pudding. I love the flavor, simplicity and quick prep, but it is very thin. I refrigerated it, and it just separated. I modified recipe by increasing the cornstarch to 1/3 cup and reduced the milk by 1/2 cup. I also began using whole milk instead of 2% so it's thicker, but it still doesn't "gel" to a regular pudding consistency.

Banana Pudding I

Fantastic vanilla flavor!! Cooked on medium-low heat until it was just a smidge thinner than "pudding". After refrigerating, it turned out to have the perfect consistency. I used a 9-inch pie plate and it worked nicely, but I could have still doubled the recipe. If using a 9x13, I recommend TRIPLING the recipe! No way this serves 18. Maybe 6 or 8. **Note: It helps to have a gas stove to control the heat. Definitely needs to be cooked above a low setting to turn out less watery.
