Chef John's Baked Mushroom Risotto
Made this last night and it was fantastic. I love risotto and make it often, but did not have time to be held hostage at my stove stirring and ladling last night. I've used Ina's baked risotto in the past but came across Chef John's yesterday and decided to give it a try. I made a few modifications based on what I had in the house...broccoli instead of mushrooms and added a bit of chopped garlic and white wine. Otherwise followed the recipe exactly and it was absolutely perfect. Loved being able to stick in the oven for 15 minutes and walk away. Awesome recipe. Thanks Chef John!

Broccoli Cheese Soup
I made a fantastic broccoli cheese soup last year and couldn't find the recipe so I tried this one because I happen to have some Velveeta in the fridge. I followed the directions almost exactly except that I added garlic and white wine in with the onions. I am not a huge fan of cornstarch to thicken soups and wish I had made a roux during the onions cooking phase with flour. The cornstarch gives it a weird consistency. I thought the final flavor of the soup was almost too sweet due to the Velveeta and I hated the consistency. But, it was super easy and my husband kind of liked it. Probably wouldn't make it again without several modifications.

Famous Butter Chicken
This is a fantastic, quick, easy recipe. I made it tonight and my whole family loved it...including two picky eaters. I used only half a stick of butter - a whole stick would have been too much for my taste. I added a bit of onion powder, paprika parmesan, and seasoned salt in with the garlic salt and pepper. Baked it for about 35 minutes, let it rest for a few and served it with buttered noodles and veggies. It was delish! Definitely going into my rotation. Thanks so much for sharing!
