Spicy Bean Salsa

Reviewed: Feb. 12, 2011
I made this for the Superbowl and it was great! Much better than I would have imagined just by reading the ingredients. I don't think it's necessary to use the entire amount of Italian dressing. I used 1/2 as much and it was plenty. Will definitely make again!

Butternut Squash Enchiladas

Reviewed: Feb. 12, 2011
We made a vegan version of these by omitting the cheese and using Tofutti sour cream. They were excellent! My only problem -- I followed the directions with the tortillas, but my corn tortillas were very tough and chewy. Any advice on how to make them more crispy? Thank you!

Turkey Cranberry Pinwheels

Reviewed: Dec. 30, 2009
I'm giving this 4 stars, but only due to the taste and few ingredients (easy & cheap). I must have done something very wrong because my pinwheels looked more like "turkey cranberry blobs" than nice, neat rolls. First, the crescent dough was difficult to work with and I was unsuccessful in "pressing perforations to seal." When I went to roll the dough, it came undone in all the original perforations, depsite my efforts to press them closed. Also, I must have put too much filling (turkey, cranbery, cheese) on the flattened dough because when I went to roll the dough, the filling just oozed out of the long end, making it difficult to cut into neat slices. I would reccommend leaving at least 1 inch on one long edge without filling ...and use the filling sparingly. But like I said, the taste was great! Very sweet and buttery. Like little turkey sandwiches, but better. My family liked them, despite their appearance. :)

Flaky Crescent Mushroom Turnovers

Reviewed: Dec. 27, 2005
I made these for my Christmas lunch and they were pretty good. Let me try to explain the confusing cresent roll dough, since it seems like a lot of people had trouble. I used Pillsbury Crescent Roll dough (regular size, not Grands). When you unroll the dough, the dough will be perforated... you will see 4 large rectangles, with each rectangle divided into 2 triangles. Ignore the triangles... break the dough into the 4 large rectangles. Then, with the knife, cut each rectangle in half, leaving you with 2 squares for each rectangle (for a total of 8 squares. Put the mushroom filling in the middle of the square (which will still have perforations - squeeze this together to keep the turnover from breaking apart). Just fold the square so it's corner to corner, into triangles and press with the prongs of a fork to keep closed. Best when dough is very cold = much easier to work with. I hope this makes sense!!

Apple Turnovers

Reviewed: Dec. 27, 2005
I was truly amazed at how wonderful these were! I had never worked with puff pastry before, so I was a little nervous, but my guests couldn't believe the turnovers weren't store-bought. I'd also like to add that they are very EASY to make too. Thank you for this receipe -- it is a new Christmas breakfast tradition at our house.

Hot Spinach and Artichoke Dip

Reviewed: Dec. 27, 2005
I served this for Christmas lunch and everyone loved it. Plus, it's SO easy!! I omitted the bacon but it still turned out great. I served it with little sourdough bread slices (toasted). Will definitely make again.

Melt in Your Mouth Mint Brownies

Reviewed: Nov. 28, 2005
The brownies taste great and are SO easy! However, there was no stunning chocolate and green mint display. They were essentially brownies topped with Andes mints, but you couldn't see the green.

Candied Sweet Potatoes

Reviewed: Nov. 28, 2005
I liked the potatoes, and do agree that they are not overly sweet, but I thought it was difficult to get the potatoes to the right consistency. My advice: leave them slightly firm before adding them to the sauce. After cooking for 20 more minutes, mine were too soft and mushy.

Easy Salmon

Reviewed: Jan. 3, 2005
The salmon itself turned out great! The marinade (italian dressing mix), however, could have been stronger. It didn't provide much flavor to the salmon.
