Creamy Chocolate Frosting

Reviewed: Mar. 12, 2013
It was easy. It was "ok"..but I made a few changes that made it much better, easy tweaks. I made it as written, but it wasn't very chocolaty, and it was wayyyy tooo sweet. I ended up melting 1 more tbsp of butter and warmed half a box of reg cream cheese and blended them together until smooth. I added it to the icing from the original recipe. It was a little thinner and a little less sweet. Still to sweet, so I started adding more tbsp's of cocoa (i used hershey brand)..Ended up with about 4 more tbsp of cocoa, maybe 5. I didnt really measure, just poured a little in and tasted and watched consistency. Finally i had a good icing. I iced my cake, and the icing was still ok, but much better then before. THE NEXT DAY THE ICING WAS WONDERFUL. No one cut the cake, and we left it out to air over night by accident and the icing took on a whole nother dimension. My husband (it was his birthday cake) said it was the best cake he'd ever eaten. KEEPER...will never buy frosting again!

Dinah's Baked Scallops

Not sure what I did but these things came out very watery! All the breading was coming off and gooey...just didnt work for me. I followed the directions exactly so I have no idea why? These were previously frozen scallops.

Country Apple Dumplings

Reviewed: Jan. 9, 2013
I made this, it took me maybe 15 minutes to put it together. LOVED IT! I used 1 cup white sugar, 1/2 cup dark brown sugar and lightly boiled it down in my melted butter making a caramel consistency. I also mixed my apples in sugar and cinnamon. Next time I won't use the whole can of soda as it was a little watery at the bottom..maybe i'll try half a can. There are only 3 of us so i'll half it next time also. Its not as good the second day, the crunch cinnamon topping (think cin toast crunchy) becomes soft a couple of hours later. Half would be perfect for a family of 4! We had icecream, but my hubby who has a huge sweet tooth said he didnt want the icecream that it was perfect without it! I only used 3 medium apples for the full batch, and i had trouble closing the dough around that, so I'm not sure how others are just quartering thier apples unless they are really tiny ones. ENJOY this is a once a week kind of dessert :) I can imagine this being really good with fresh peaches or even cherries. YUM!

Sausage Crescent Rolls

Reviewed: Apr. 21, 2012
My husbands favorite thing ever. I have made it weekly only because I refuse to make it more often for fear he will tire of something so easy to make. Pillsbury now makes a seamless crescent roll, so no more lines to pinch. I buy reg sausage which ever brands on sale, Owens or deans, less fat, anyway I add red pepper and onion, wallah spicier without being to spicy. Don't omit the egg wash, it makes the breading flakier, but I find the poppy seeds annoying and don't add anything at all. My hubby who is picky, says the inside tastes like yummy sausage gravy. It does, it's wierd. I think I'll try this with other things inside, it's opened up a world lol

Pork Chops to Live For

Reviewed: Aug. 1, 2011
my husband wont stop eating this and wants me to make it weekly...its great but 2 times a month is enough lol. I did what other did. I omitted the egg, just floured the chops with garlic/salt/pepper. fried 4 minutes on each side with canola oil. I have a family of 5 so i used a family pack of boneless chops (9) that were on sale. I wont use anything else btw now. I added 3 cans of cream of mushroom (lowfat) 2 cans of cream of chicken, 1 can of beef broth (i made too much gravy, it would have been fine with 2 mushroom 1 chicken and 1 beef). lipton onion soup packet. and pepper. I cooked for 5 hours on high, then 3 hours on low. I had to stir it a bit here and there. Then added a cup of milk. DONT SKIP THE MILK. Not if you can help it, it made the gravy 10xs better. I also chopped a few potatos, which my son loves but also served it with mashed as my hubby loves that. Served it with a fruit salad. Made dinner and lunch for 3 the next day.
