It was easy. It was "ok"..but I made a few changes that made it much better, easy tweaks. I made it as written, but it wasn't very chocolaty, and it was wayyyy tooo sweet. I ended up melting 1 more tbsp of butter and warmed half a box of reg cream cheese and blended them together until smooth. I added it to the icing from the original recipe. It was a little thinner and a little less sweet. Still to sweet, so I started adding more tbsp's of cocoa (i used hershey brand)..Ended up with about 4 more tbsp of cocoa, maybe 5. I didnt really measure, just poured a little in and tasted and watched consistency. Finally i had a good icing. I iced my cake, and the icing was still ok, but much better then before. THE NEXT DAY THE ICING WAS WONDERFUL. No one cut the cake, and we left it out to air over night by accident and the icing took on a whole nother dimension. My husband (it was his birthday cake) said it was the best cake he'd ever eaten. KEEPER...will never buy frosting again!
