Nana's Southern Coleslaw

I really liked this coleslaw, and I don't like coleslaw! I think it turned out wonderful, but the second time around I also reduced the sugar to 1/8 cup, and reduced the lemon juice to 1 TBSP. The next thing I might try to adjust would be the dressing. It seems to get too watery once the cabbage is added. I may try adding 1/4-1/2 tsp of xanthan gum to the dressing before mixing it in with the veggies. Also, I'm an onion lover, so I used twice to three times the onion on the second go-round, and it was STILL great!

Ham and Broccoli Bake

We loved this! My family is gluten intolerant, so I couldn't use the canned alfredo sauce, but to accomodate, I made a roux out of potato flour, butter and milk then added milk a little at a time to keep it from lumping, until I had enough white sauce to cover the pasta. Then I added shredded mozzarella a little at a time to the white sauce until it was as thick and cheesy as I wanted then seasoned with salt and pepper. I subbed peas for broccoli, as I had no broccoli, and used Hormel Natural Choice sliced deli ham instead of regular ham, as I cannot eat the average ham (bummer). All in all it turned out wonderful, just a little under-spiced because I made too much sauce and under spiced the cheese sauce! Next time I will adjust my spices. So, five stars anyway, and this one goes in my recipe binder permanently!

Cream Cheese Frosting II

Great flavor. I added 1/2 tsp lemon juice for a bit more of a cheesecake-ey flavor, and wow! I had a little trouble with it softening into a glaze like consistency, but put it in the refrigerator for 30-40 minutes, and it thickened back up.
