Yummy Beef

This was just ok...and I that was with a few modifications. I thickened the sauce, added celery salt and Montreal Steak spice, and added grated swiss cheese to the top. I am not quite sure what it would have tasted like without the additional ingredients -- but I would think it would be very bland. As it was, it was still not a home run. I'd give it 3.5 but the option isn't there. Not bad, but not great.

A three for being different. We used the honey mustard sauce from the Aussie Chicken recipe to dip in. It was good, but still not a knock out.

Red Potato Bites

The time cooking potatoes was off. Even after 20 minutes the potatoes were still hard. It was difficult to scope out the insides without breaking the skin. I can see this being good, but we just didn't have any luck with it.

Mediterranean Stuffed Chicken

I gave this a four, only because I would reduce the amount of cheesy stuffing the next time around. It was delicious, though!! I will make this again. I was thinking of adding pineapple to the cream cheese and feta filling.

Fresh Pasta

Pumpkin Ravioli with Hazelnut Cream Sauce

This was a nice change from the norm, but was very time comsuming. Not being a veteran home made pasta maker, we ended up with some pretty sticky ravioli's (I read that you should cover them with a damp cloth while you make the entire batch of pasta up - so that they don't go hard. The leftovers went into a baking dish. Covered the ravioli with the sauce and will have a nice pre-made casserole this week for dinner.

Aussie Chicken

This was really good - even though I goofed up the recipe. I didn't pound the chicken breasts so they were left in tact. Everyone really liked it though. Served with roasted potatoes, cole slaw and beans.

Scallop Scampi

This got raves from the family. Added shrimp and mushrooms and a handful of Swiss cheese to the sauce. Also used a thickener to thicken it up enough but not too much. This sauce should be on the watery side. GREAT meal.

Lasagna Alfredo Roll Ups

Made this and found it very plain. When we reheated it, I added spaghetti sauce and more mozzerella cheese, which improved the tasted. This is a good base recipe, but if I cook it again I will add meat (ground veal or chicken would be nice),mushrooms and use spaghetti sauce over the Alfredo (or instead of).

Veal, Chicken and Beef Canelloni

Fantastic! The family loved it. The crepes mad it taste much lighter as oppossed to when using a canelloni shell. The results were a great meal that wasn't weighed down by pasta.
