Lemon Poppy Seed Bundt Cake

Made it today for my son's 10th birthday (at his request) and it was extremely easy and very delicious! I made the alteration to lemon pudding, baked it for only 50 minutes and finished it with a basic powdered sugar/milk/vanilla extract glaze - YUM! Next time I'm going to do a lemon glaze, as I think that will enhance it even more. Good stuff.

Cinnasweet Pumpkin Seeds

I wish I had paid more attention to the reviews! (There were only 2 of them when I made this recipe.) The oven temp on this recipe is obviously way too high, especially compared to other toasted pumpkin seed recipes. That should have thrown a red flag for me, but I didn't trust my instincts, and instead followed the recipe, only to end up with burned seeds. Too bad, I really liked the idea of a sweet alternative to a seasonal favorite. Maybe I'll try again next year with a 275 degree oven...

Simple Ranchy Breaded Fish Fillets

Way too salty! Will try again, perhaps on chicken, but will heed some of the advise of others to dip in an egg white, then dredge in a mixture of breadcrumbs and ranch mix, although I think I'll still reduce the amount of ranch mix to ensure a less over-powering flavor.

Asparagus with Sliced Almonds and Parmesan Cheese

This was easy and delicious! I waited to add the Parmesan until I put the asparagus on the serving platter, which worked out quite well. Yum!

Deluxe Waffles

This recipe worked perfectly when I realized on a Sunday morning that I was out of Bisquick and had no buttermilk or yogurt. My family really enjoyed them--I may even give up the mix for these!

Easy Chicken Breast

Taking the advice of others, I seasoned the sauce and used 1 can each crean of chicken & cream of mushroom. It makes a lot of sauce (half would do fine), which I served over mashed potatoes, so I froze the excess for use next week over breaded, baked chicken breast. It also has kind of a strong wine flavor, but we liked it. VERY easy!
