Carrot Cake I

Reviewed: May 4, 2005
This is a very moist and carroty cake. For a cool variation on this use 1.5 cups carrot and 1.5 cups shredded and peeled zucchini. Substitute half of the raisins with dried sweetened cranberries. These will make the cake a little smoother and milder. Enjoy!

Oil Pie Crust

Reviewed: May 11, 2005
Very easy, the trick is to roll it as thin as possible. For even better results make the dough first, put into the pie plate and refrigerate while making the filling.

The Best Vegetarian Chili in the World

Reviewed: Jun. 9, 2005
This recipe is great because it is fast, nutricious and you can mix up the ingredients. I used 1 can of small diced tomatoes and a small can of tomato sauce. Pinto instead of kidney beans. Frozen corn kernels work great in this.

German Apple Cake I

Reviewed: Jun. 5, 2006
The first time you make this cake you may think the batter is wrong. It is as thick as playdough and very difficult to manage. But the payoff is amazing. Moist, good balance of flavors, keeps very well.

Spinach and Red Chard Quiche

Reviewed: Sep. 6, 2006
Should not be called a quiche. Interested substitutions, but it is completely different in taste and texture. The spices also are a throw off. For one, anyone who cooks Indian will not get the curry ingredients. Curry is not one thing, but many, so that already alters the recipe. And with the addition of the other spices which can already appear in curries it becomes confusing.

Leek Potato Mushroom Cheddar Soup

Reviewed: Oct. 1, 2006
For a lighter twist on this recipe: I omitted the cheese and added 1/2 a pound of steamed broccoli, run through the food processor. You could do the same with frozen broccoli thawed and chooped that way. Also, try sauteeing the potato and leeks in sherry, add the sherry about halfway through.

Best Ever Banana Bread

Reviewed: Dec. 18, 2006
The quintessential banana bread. I used three full sized bananas which is probably more than the recipe calls for and it came out perfectly, with a little more time in the oven.

Country Seed Bread

Really nice bread, great for toasting too. I replaced half of the water with the soy milk for a little more flavour and protein.

Try this for added flavour: Increase water to 1 cup, and oil to 3 Tbs. Add 1 Tb each of oregano and thyme, and 1/2 tsp garlic powder (not garlic salt). Add 4 Tbs. sesame seeds.

Very moist. About the best addition one could add to a chocolate cake to make it even better!

Rhubarb Dream Bars

Reviewed: Jul. 21, 2007
Excellent recipe, try these alterations: to make the bottom part melt the butter (only use 2/3 cup) and use brown sugar. As other reviewers have said use 2 cups instead of 3 for the top part, and I used whole wheat flour on top as well. So overall, a lighter recipe, and a very good alternative to cake or pie.

Shrimp Provencal

Reviewed: Oct. 3, 2007
Awesome recipe! Very easy. I took the advice of some other people here and reduced the tomato paste to half, and increased the garlic a little. Also, I added the basil a few minutes before the ned of cooking to let it combine.

Turkey Potato Tetrazzini

Great recipe. I added fewer potatoes though, and more turkey. Also, I added sliced bell pepper and it really added to it.

Hot Water Pie Crust I

Reviewed: Oct. 14, 2007
Very easy. I used the food processor too. I halved the recipe for one crust. It turned out very easy to roll out and stretch, and it was light and crispy.
