Honey of a Peach Cake

Works as a GF cake, too, using less flour (of a GF variety). I tried using half the honey and a teaspoon of stevia, as well. Tasted great!

Tea Biscuits

We used spelt flour (half wholegrain, half white), substituted unsweetened soy milk for the milk, and then also added orange zest to half of the dough. They turned out great!

Louisiana Sweet Potato Pancakes

Used white sweet potatoes and subbed spelt for the flour, earth balance for the butter. Very moist and not too sweet!

OMG, yummy! Even my daughter and husband who haven't got a single sweet tooth between them, both loved this. I made a second one two days after the first for a party, and everyone was asking for the recipe. I used spelt flour as a subsitute for regular flour (due to dietary restrictions) and it came out flawless.

Lazy Dazy Cake I

Lovely cake! We used a bundt pan, and it took about 40 minutes to be done. I also always cook with substitutes, due to dietary restrictions - we used margarine, soy milk, and spelt flour, and it came out great!!

Baked Kale Chips

Yummy, healthy. and so simple! My toddler couldn't get enough of them - she kept calling them potato chips. Yes, there is a slight kale aftertaste (it IS kale, after all), but they do in fact taste like potato chips when you bite into them. What do chips taste like other than oil and salt, anyhow? We are going to be making more of these right away tomorrow!

Mom's Pretzels

Perhaps the problem was using spelt flour instead of regular (our daughter cannot tolerate regular wheat flour) but we had some serious problems. We needed to add a lot more flour so the dough wasn't too sticky (a common problem with spelt substitution). Leaving the pretzels to set for 30 minutes allowed them to start forming a crust, but then putting them into the water, they expanded and every crack in the crust was magnified. Quite tasty but misshapen pretzels were the result.

Slow Cooker Pulled Pork

Turned out very tender - great technique! But next time I will try using "regular" root beer and sauce, since the all-natural stuff we used (Boyland's root beer and Annie's Smokey Honey sauce) left it tasting a bit... odd. I think good ol' A&W would be tastier in this recipe.

Fudgy Chocolate Chip Muffins

I use spelt four instead of regular flour, due to my daughter's wheat allergy. These are soooo good, that people are constantly asking me for the recipe! On occasion, I put a maraschino cherry in the middle of the cupcakes, and then top with cherry icing!

Carrot Cake XI

This turned out great! I substituted applesauce for the oil, which made it nice and moist. I also used spelt flour instead of regular wheat flour (which my daughter is allergic to). I added about a teaspoon of allspice to the recipe (which I do to any recipe calling for cinnamon) and it had a fantastic spice flavor.
