Between me and my daughter, we are Gluten-free, Casein-free, and sugar-free. We also eat local and organic, with as little processing as possible.

GFCF cakes and muffins of all sorts!
My cooking tragedies
GFCF *and* sugar-free baked goods. I also have yet to make a good pancake with these restrictions.

Tea Biscuits
We used spelt flour (half wholegrain, half white), substituted unsweetened soy milk for the milk, and then also added orange zest to half of the dough. They turned out great!

Louisiana Sweet Potato Pancakes
Used white sweet potatoes and subbed spelt for the flour, earth balance for the butter. Very moist and not too sweet!

Jewish Apple Cake II
OMG, yummy! Even my daughter and husband who haven't got a single sweet tooth between them, both loved this. I made a second one two days after the first for a party, and everyone was asking for the recipe. I used spelt flour as a subsitute for regular flour (due to dietary restrictions) and it came out flawless.
