About this Cook
I am the mother of two children- a boy and a girl; and I tend to take out my creative instincts on them through my cooking! They and my husband are used to me trying out new things on them, but they also know that I only give them my absolute best, and actually look forward to being my official "taste-testers"! I love to entertain friends and family. I also LOVE flowers, and get busy in the spring and summer with gardening! I try to keep fresh flowers on my table every week or two, all throughout the year. I am also a Type 1 diabetic who uses an insulin pump, so staying healthy and using only the healthiest food choices for my family is very important to me. I always look forward to visiting the local farmer's markets during the spring and summer months.
My favorite things to cook
I love to try all foods, and to try out new recipes on my family and friends. I especially love to bake, however! Homemade bread is a definite comfort food, but cupcakes and desserts of all kinds are also a blast to make!
My favorite family cooking traditions
I spent a lot of time by my grandma's side in her kitchen, growing up. Having 9 kids and 30+ grandkids, she always made enough to feed an army! That's how I explain myself when I make WAY too much food during the holidays... I learned most of my best cooking skills from my grandma!!
My cooking triumphs
I have made some great and creative cakes and cupcakes. People just rave over not only their good looks, but also my desserts' great taste--I'm just glad they turned out, and that they're edible!! For my husband's 39th birthday, I made him a "cheeseburger" cake that looked like a real, giant cheeseburger. It was a lot of fun!
My cooking tragedies
One time I improvised on a recipe, by adding a red wine that I had on hand, versus the exact kind the recipe indicated. It definitely made a difference!! Needless to say, my family couldn't even be polite and eat it anyway... it was AWFUL!!

Super Simple Biscuits
These are now the ONLY biscuits I make! Usually, you have to sacrifice taste or quality, for simplicity in preparing. NOT SO with these biscuits! They are tender, flavorful and scrumptious! Definitely a keeper!

The Right Choice Chocolate Chip Cookies
Wow! The coconut extract compliment these cookies fantastically! The only thing I changed was to substitute margarine for the shortening. The cookies bake up plump and chewy. Perfect and YUMMY!

Extra-Yummy Fluffy Pancakes
These are the ONLY pancakes that I ever make! My kids even request them by "name"! My family is full of pancake lovers, and ever since we've started using this recipe, there are no more "boxed" pancake mixes for them! The pancakes are consistently moist, fluffy and have great flavor-- the way pancakes were meant to be! We change some of the measurements of sugar, vanilla and cinnamon to our tastes, but it is also awesome the way the recipe is written. Thanks for the fantastic recipe!!
