Brown Sugar and Spice Dry Ham Rub

Ok, I admit up front- I didn't have any pumpkin pie spice, so i had to substitute. In this case, I used Garam Masala in place of it. I had a very large ham, 12lbs, so I made half-again the amount called for, using 1 1/2 cups brown sugar, 3 tsp. Garam Masala, 3/4 tsp mustard powder, and I skipped the onion powder, since I didn't have any of that either. The dry rub smelled and tasted wonderful, and the ham came out moist and super flavorful, with a crust from the rub. It was fantastic, and a huge hit with my family! Thank you!!

Grilled 'Fusion' Pork Chops

Am I really limited to 5 stars?? This was fantastic! I had to use ground ginger, because I didn't have any ginger paste. It gave the impression of sweetness, but wasn't sweet at all. . .I love both Asian and Indian food, and this blended them beautifully with the ginger and the Garam Masala. So yummy!!

We found this very tasty! I had to bake it longer than the time on the recipe, but that's not to do with the recipe. . .The crust had a lovely flavor, and a great crunch! This is a keeper!

Shredded Chicken Tacos

This came out SO yummy! My changes (due to necessity) were- One 14oz can of petite diced tomatoes, rather than 2 cans of sauce; 3 cloves fresh garlic, passed through a garlic press; Italian Herbs rather than oregano; I didn't use anything branded Goya. I cooked according to directions, and they were the tastiest chicken tacos I've ever had. All 4 of my kids loved them, and so did my husband. This is a keeper!

Scott's Buffalo Wing Sauce

I can't have it, I'm allergic to cayenne, but my husband says this is wonderful! I skip the butter, as previous posters have suggested, and discovered something. . . when you drop the butter, there is no fat at all! He says it's wonderful! Thank you for the recipe!

Chicken Breasts Pierre

This was surprisingly fantastic! I didn't have stewed tomatoes, so I used diced, I don't have celery seed, and I upped the garlic to 3 cloves, but it was SO yummy! The chicken was done just right, my kids ate it up, as did my husband! I had to add 1/4 cup of water, because when I put the tomatoes in the pan when it was very hot, and boiled off a lot of liquid. Will be adding this to my regular recipe list! :D

Tortilla Pie

My family really enjoyed this! I cooked just over 1lb of ground beef, added some chopped bell peppers and a can of black beans, dropped the chili powder and doubled the cumin and added salt and pepper. I used a full 16oz of Ricotta, and prepared the whole thing in a 9x13 Pyrex dish, with 6 tortillas total (2 each layer). I used all '4-cheese Mexican blend' cheese, and used about 3 cups of cheese total. We loved it, but I think I'm going to make some changes. Next time, I'll add a can of green chilies to the ricotta, and maybe use salsa in place of the tomatoes. I only made 3 layers, and it was almost too much tortilla, so I think that's about right. This was a great starting point, I will be making it again!

Goulash Supreme

Loved it! I went with the suggestions of a few reviewers to cook the pasta first, and I used diced tomatoes and some tomato sauce instead of the stewed tomatoes. I also used cumin instead of chili powder. All in all, it was a wonderful dinner. . .all my changes didn't change the fact that it was a good, solid recipe to begin with. It was plenty to go around, with leftovers, which is a huge thing for our family! Thanks for a great recipe! :D

Cheesiest Potato Soup

THis was very yum! I used small white potatoes, and rather than pureeing it completely, I used a hand-smasher and took turns with my son mashing up a bunch of the potato. It was nice and think, but not too much so. I also used a whole 2 cups of cheese. . .tasted great!!! Thank you!

This was fabulous! This was a great cheese-free recipe! I only had plain diced tomatoes, so I added a whole can of diced green chilies to the mix. The whole thing balanced out so beautifully! Awesome recipe!

It was really good! Would have been better with garlic (I was out) but it was perfectly serviceable as it was! I made it in my little 3-cup chopper, so it was well-emulsified, too!

Pineapple Chicken Tenders

My kids loved it! It was almost a homemade teriyaki sauce. . . I cooked it stovetop, in my big frying pan, and poured most of teh sauce in the pan with the chicken. Came out super-flavorful. Definite repeat, as my kids would say!
