Baked Potato Soup

I made this recipe as written, with 2 exceptions: I used an entire quart of broth and I boiled the potatoes in the broth rather than bake them. This soup is very tasty and easy! It's become part of our regular dinner rotation this fall.

Salsa Chicken

My husband made this... it was very easy and tasty. Nothing fancy, but good. We served it with black beans and a green salad. Next time I may saute up some onions and peppers fajita style to go with.

Roasted Vegetables

Ever since I made this recipe, my husband requests it weekly! The leftovers taste just as good the next day, too! I typically substitue carrots for the squash and sometimes leave out the pepper, but I other than that I make it exactly as described! (By the way, I have made this with both fresh and dried herbs and DEFINITELY can tell the difference... try to use fresh if you can!)

Spinach-And-Berries Salad With Non-Fat Curry Dressing

I thought this salad was absolutely delicious! The dressing really brought all of the other ingredients together. I substituted sliced almonds for the pecans to suit my own tastes. Great recipe!

Chicken Chili

My husband and I really liked this chili. I made it with one pound of ground chicken and I also substituted one can of diced tomatoes with chilis for the can of whole tomatoes, because i don't really care for big chunks of tomatoes. It came out great. I think the blend of seasonings was perfect for my taste. I will probably use this as a base for chili with beef or pork as well. I served it with toasted tortillas.

Spinach Lasagna II

Panna Cotta

This dessert was very easy and very tasty! I served it for company and the scraped their ramekins cleaned! I served it with strawberries and chocolate fudge. I really liked the chocolate with it. Great recipe!

Spinach-Stuffed Flounder with Mushrooms and Feta

I really liked how quick, easy, and healthy this dish was. Like a lot of other raters, I added some extra feta cheese and some basil for flavor. I will make this again!

Boudreaux's Zydeco Stomp Gumbo

I have made this recipe twice, both times to rave reviews. Both times I've made it a little differently, but the spices and variety of ingredients are what I think make this dish. I cut the liquid back to about 1.5-2 quarts so that it comes out a little thicker and more suitable to be served on rice. I also didn't have "cajun seasoning" on hand so I made my own with a mix of cayenne pepper, garlic powder, onion powder, pepper and paprika. My husband asks for it all the time now. Thanks for the recipe!
