Chocolate Covered Cherry Cookies II

Excellent cookie! Please note that since the yield stated 18 cookies I doubled the recipe - and I ended up with 8 dozen cookies. Luckily I had some extra maraschino cherries on hand!

I liked this, although it made a bit too much sauce in my opinion. It tasted great over rice. Next time I'll cut up the chicken beforehand and serve it á la king style. I also used the pepper jack soup instead of the plain cheese.

Peking Pork Chops

I made this for my family and they liked it, although I didn't have a chance to try it. Next time I'll use it as a marinade and grill the pork chops - that sounds delicious already! Oh, and I'll use the low sodium soy sauce, too.

Pretzel Salad II

You can't go wrong with this pretzel salad, everyone loves it. To the reviewer below, you need the 3/4 c. butter so your pretzel crust doesn't stick to the pan. Also, make sure your gelatin mixture isn't too liquidy before you pour over the pretzel crust. Let it thicken more than just 'slightly.'

Tangy Sliced Pork Sandwiches

A great way to use the leftover pork roast. I sliced the meat instead of cubing it. The 1/2 pound of meat was fine for my family of 4 (which includes a 6 year old), but you may want to adjust upward if you have big eaters.

Chicken Enchiladas II

IT'S A HIT! If I could give this recipe 10 stars, I would. This is the best thing I've made with chicken that the kids like, too. It's easy to make but tastes like you spent all day in the kitchen. I usually make a few enchiladas with the stuffing as is for the kids, then I add some chopped jalapenos to the rest for me and Mr. Imladrischef. :)

Elaine's Peanut Butter Cookies

This recipe yields some great and easy cookies! However, I strongly recommend, as others have, using 1.5 cups of peanut butter and 3 eggs. I also sprinkled with sugar before baking, and baked for 12 minutes. Adding the extras yields 5 dozen cookies. 4.5 stars.
