Fava Bean Breakfast Spread

I made this for my children and they all loved it. It was easy to make, and they are all requesting that I make it again! I often prepare black beans in much the same way, blending them to make "refried beans" for burritos.

Cabbage Roll Casserole

LOVED this!! I used brown rice (it takes more liquid than white) but other than that left the recipe alone. Wonderful comfort food, and so easy to make, this will be making regular appearances at our table.

Indian Style Basmati Rice

Tastes just like my local Indian restaurant! I never substitute ground spices for the whole ones. After making this a few times I switched to using Jasmine rice, skip the soaking, and change the amounts to 2 cups jasmine rice and 2 cups liquid (I substitute chicken broth if I have it on hand). Wonderful flavor! At the end I throw in a handful of frozen peas. It only takes a minute to steam them then stir them in. Very easy to make!

Tuna Curry in a Hurry

I can't think of a better way to prepare canned tuna! My family loves this. I always double it, I sometimes substitute yogurt for the sour cream, and throw in some frozen peas. Also, we like to add a bit of tomato sauce. I like hot curry powder, but the family prefers the regular (I always add more than the recipe though). Best served with Indian Style Basmati Rice from this site that is easy too.

This is tops for quick and easy! I made this for dinner tonight, and the family loved it. I would not add salt to the dish. Onions might be good. I will be making this regularly.

Daria's Slow Cooker Beef Stroganoff

Fantastic recipe! Served this with egg noodles on the side at a church dinner. Got rave reviews. I made this recipe as directed except that I didn't have any cans of condensed mushroom soup, so I made my own. [by melting 1 Tbsp butter in a saucepan and gradually stirring in 3 Tbsp flour until it made a smooth paste. I combined 1/2 cup beef broth with 1/2 cup milk and added this liquid a little bit at a time to the flour paste stirring it to keep it smooth and letting it heat while stirring until it was as thick as I wanted it. Then I added a small can of mushrooms, salt and pepper.]

Chiles Rellenos Pie

This is fabulous. I made it with no changes whatsoever. My husband loves Chiles Rellenos at a restaurant, and he said this is the best he's ever eaten. In fact, the whole family loved it. This is not eggy enough to be a quiche, and it is much easier than making individual chiles rellenos, and absolutely just as tasty, if not more so! Fantastic recipe!

Bev's Chocolate Pie

Made this for an aunt that requested chocolate pie. I'd never made one before, so I really was nervous. This pie was delicious, and it passed her test! It did take a lot longer than 35-40 minutes to bake until it was not "wobbly" (maybe because I had a casserole baking as well) but it finally got to that point-I thought I'd ruined it because it looked dry, but I put the meringue on anyway and when it was all done, it was beautiful. We ate it while it was still warm, and it was not runny, and it was not dry, just a delicious chocolate pie. I'll be making it again!

Bacon Wrapped Chicken

Mmmmm! No leftovers. I doubled the chicken and bacon, but not the sauce. Had plenty to serve with brown rice. After wrapping the chicken with the bacon, I put it under the broiler until the bacon was partially cooked,then poured the sauce around the chicken, not over it. It was wonderful.

Steamed Radishes

I'm giving this a five-star rating because I am just floored by learning that radishes can be cooked! What a simple, but wonderful dish. My husband and I are on a strict diet, so I had to leave out the butter, but they were just delicious anyway. I just sprinkled a little salt and pepper. We will have them often!

Chocolate Bar Fondue

This was so great! I used 3 bags of 60% dark chocolate chips, and it was a little too dark for some of the kids, but the grown-ups loved it. I may add one bag of milk chocolate chips next time. I didn't do a good job of melting the chocolate. It got all clumped up, but with a LOT of stirring and adding more whipping cream, it smoothed out, and was delicious. We dipped fresh fruit, pound cake, and marshmallows. Will definitely be using this recipe again.

Cheese Fondue

This is wonderful! I made this in a saucepan and then poured it into the fondue pot, and I am so glad I did. I did add a few drops of lemon juice to help with the clumping, but I think the key is to really stir it hard and fast to get it smoothed out. Wonderful recipe. I'm sure I'll be making it again!

All Protein Meatloaf

My family declared this meatloaf to be the best I've ever made. I subbed salsa for the tomato sauce because of such a large amount of chili powder. I put some grated cheddar cheese in the middle. Fabulous!!
