Viva Madrid Spanish Chicken

I loved this recipe! My family didn't even notice the dates until I told them, and they loved it. I did use a turkey baster to remove some of the fat that accumulated in the sauce before serving. I served it with couscous instead of the spanish rice. I'll definitely be fixing it again.

Fava Bean Breakfast Spread

I made this for my children and they all loved it. It was easy to make, and they are all requesting that I make it again! I often prepare black beans in much the same way, blending them to make "refried beans" for burritos.

Hash Brown Quiche

I loved this recipe. I made it for my dad who can't eat anything with flour in it, so a regular quiche is out. I used about 9 eggs, increased the milk to 1 cup, and put it in a 9x13 dish. I also played with the seasonings a bit. I'll make it again!

Pork Chops in Beer

My family loved this. My pickiest daughter ate three helpings! I pretty much followed the directions given except that I did brown the chops in a little olive oil and garlic salt before I put them in the baking dish. I used Warsteiner dark beer and I didn't have quite enough kethcup so I made up the difference (1/2 cup) with Heinz 57 sauce. I used a cheap grade of chops, about 5 lbs (9 big chops with bone) and had PLENTY of sauce. We poured it over rice and it was just delicious. This is a keeper. Very easy.

Playgroup Granola Bars

This is one of my family's favorite recipes. I make it at least once a week. They are easy, delicious, and nutritious. I have played with the ingredients, and they are always good. Our favorite version is doubling the recipe using a 1 lb. bag of "Bob's Red Mill 5 Grain Hot Cereal" for the rolled oats and adding 1/2-1 cup coconut. It is our favorite breakfast and take-along snack.

Kung Pao Chicken

Wow! I loved this!! I will definitely be making it again and again. I doubled the recipe and also doubled the sauce and marinade. I didn't have sesame oil, so I used olive oil, and I didn't have the chili paste, so I used chili sauce. I have since gone to the asian market and have the proper ingredients so I can't wait to try it again!

General Tsao's Chicken

Not too bad. I followed the advice of other reviewers and doubled the sauce (but did not double the cornstarch). The sauce was the perfect consistency. I got too much ginger in it (ok, I didn't have fresh ginger so I guessed on the amount of ground ginger-1tsp is way too much!!) that is my fault. I will probably try it again. Other than that, the recipe was pretty easy but a little time consuming.

Terry's Favorite Easy Chicken Pie

Just made this for dinner tonight. It is sooo much easier than my usual chicken pie. I used a whole wheat crust, and everyone loved it. I can tell this will be a staple, with lots of room for variety.

Reuben Dip

This was great tasting dip, but as it cooled the cheese hardened. I wonder if it would work better if it were stirred up instead of layered. Will try that next time. Still, it was delicious and there were no leftovers! served it with rye crackers.

Southwestern Chicken Roulade

Marvelous! I made this recipe without changing anything(except that I didn't measure the cheese, I grated an 8 oz. block). The Masa really adds to the flavor and texture. The filling was more than I needed to stuff four chicken breasts, so I quickly thawed and pounded two more and had six. I will enjoy playing with this one. It would be good with pepper-jack cheese, and I can see how different brands of sausage or salsa could really add variety. I served this with Mexican Rice II from this site. Mmmmm!

Eggplant Mixed Grill

I tried this recipe "as is" and it was wonderful! I was a little worried that there wouldn't be enough oil and vinegar, but by the time it had all marinated for two hours it was perfect. The fresh herbs were great, a wonderful way to cook fresh veggies in the summer! Definitely need a grill basket!

No Name Orange Roughy

This is one great recipe! I prepared it for my family last night using a sauvignon blanc wine. After removing the fish from the simmering liquid I ladled out a little over a cup of it and added it to one cup of couscous, let it sit for about five minutes, then fluffed it with a fork. I served the fish over the couscous for a delicious meal! I also prepared "Broccoli, Corn, and Green Bean Saute" from this site. Thank you for this recipe that I will fix again soon!

I'm giving this five stars even though not all of my kids liked it. I loved it. I used frozen veggies because that is what I had on hand but I rinsed them with warm water to thaw a little before cooking. I only used about 1/2 of the feta cheese it called for and plain is all I had. I will try it again with the flavored kind. This dish goes great with "No Name Orange Roughy" from this site.

This is one of my family's favorite lunch recipes (easily feeds mom and 5 kids)! I tried it once without sesame oil and was not impressed. That is definitely a must. I use a little less black pepper, and a little more green onion. Mmmm.

Inside Out Ravioli II

This is one of my favorite easy meals. I make this when my kids have friends over because it is so easy to make, everyone likes it and it's a fun food but cheaper than pizza! I usually sub. Italian sausage for the ground beef if I have it, and whatever cheese I have on hand-usually co-jack. It is considered by my family to be "birthday quality" which is their highest praise. Thanks Mary for a great recipe!

Ham and Cheese Picnic Bread

This is a fantastic recipe! I will definitely have fun playing with the fillings. I want to try it with precooked meatballs and a little red sauce; or salami, provolone and muffuletta olive salad! The possiblities are endless. I followed other reviewers' advice and added Italian seasoning to the dough (and a little garlic powder)then brushed the top with butter and a little parmesan cheese. Mmmmm!! It smelled so good baking, and was beautiful! It was the perfect thing for a picnic but I had to cut it in half to fit it in my basket!lol Thanks Holly for a great recipe. I'll be making this again and again!
