Chocolate Bar Fondue

This was so great! I used 3 bags of 60% dark chocolate chips, and it was a little too dark for some of the kids, but the grown-ups loved it. I may add one bag of milk chocolate chips next time. I didn't do a good job of melting the chocolate. It got all clumped up, but with a LOT of stirring and adding more whipping cream, it smoothed out, and was delicious. We dipped fresh fruit, pound cake, and marshmallows. Will definitely be using this recipe again.

Cheese Fondue

This is wonderful! I made this in a saucepan and then poured it into the fondue pot, and I am so glad I did. I did add a few drops of lemon juice to help with the clumping, but I think the key is to really stir it hard and fast to get it smoothed out. Wonderful recipe. I'm sure I'll be making it again!

All Protein Meatloaf

My family declared this meatloaf to be the best I've ever made. I subbed salsa for the tomato sauce because of such a large amount of chili powder. I put some grated cheddar cheese in the middle. Fabulous!!

Libby's® Famous Pumpkin Pie

The perfect pumpkin pie. We have always used this recipe. I usually add a full cup of sugar because we like it sweet. I can't bring myself to try another recipe because this one is great.

Mom's Great Green Beans

This was a delicious, easy to make side. I made this for a church dinner to accompany fried chicken. I used a 6 lb. can of green beans and scaled up the servings to 21 for the rest of the ingredients. I put it in the crock-pot on high for about an hour while I was getting ready. This kept it just perfect while serving. There were no leftovers!

Skyline Chili I

This recipe instantly became one of my all-time favorite comfort foods. I've made it stove-top when we just can't wait for the slowcooker. It is one of the most requested dishes in my family. Definitely serve it over angel hair pasta. Pile it high with shredded cheese. Diced onions are a must for me; red beans if I've got them. Wow! A few tabasco peppers,a splash of pepper juice, and I am in heaven!!

Black Bean and Corn Salad II

Oh, wow. This is sooo good! The avacado, the lime juice, the cilantro all work together to make this special. I have other black bean and corn salad recipes that I like, but this one outdid them all.

Mexican Rice II

This is my family's favorite Mexican Rice. I accidentally burned the rice once while I was browning it...that gave it such a wonderful smoky flavor that I intentionally do it now (though it does make a bit of mess on the pan). The quality of chicken broth affects the flavor. I sometimes toss in a handful of frozen corn at the end. Wonderful recipe!!

Herald's Impossibly Easy Cheeseburger Pie

I give this 5 stars for being a quick, easy, I've-got-all-the-ingredients kind of meal. My 8 yr. old son LOVES it. I would suggest adding the seasonings to the meat BEFORE placing it in the pan so that all of the meat gets seasoned and it doesn't just sit on top (and of course, season to taste--whatever you normally put into burgers). Also, I took a cue from our local pizza parlor's cheeseburger pizza and I put mustard on top of the meat mixture, then placed hamburger dill slices all over it before sprinkling on the cheese. Not bad for a quickie, kid-satisfying meal!

Mmmmmmmm! This is so good! The perfect mix of seasonings. I was a little unsure that 3 potatoes would be enough for 6 people, so I made more. Glad I did, there were no leftovers. I served it with Lemon Garlic Tilapia from this site. I'll be making this again!!

Pumpkin Date Bread

I have made this recipe for the last several years at Thanksgiving and it is always a hit. It is very moist, and the topping is just the right combo of sweet/crunch. Those who don't like nuts or dates in my famiy eat it none the wiser!
