Greek Penne and Chicken

Delicous combination of flavors, but I thought a bit too much penne for the amount of chicken. I would reduce the penne by 1/4 to 1/3.

Greek Vegetarian Pizza

Delicious. My Amazing Whole Wheat Crust (from this site) was a little tough and maybe it is because I used bread whole wheat flour and not pastry flour. A tasty vegetarian option for pizza. Takes alot of prep time chopping up ingredients to get them ready, so allow at least 30-45 minutes for that.

Greek Lemon Cake

This cake is most lemony if you use lemon yogurt and add more lemon zest, like 3tsp. Very good taste, but I think it is similar to a lemon poundcake despite whipping the egg whites. A crowd pleaser. A nice change for a crowd pleaser cake.

Chicken Souvlaki Gyro Style

Awesome, easy marinade. Instead of making gyros, I cut whole wheat pita rounds in wedges after briefly grilling them, and we ate them with the Tzatziki sauce. My family devoured the sauce, and I will double it next time. I am Greek and love Greek food, so thanks for sharing this one!

Sunrise Salad

Make sure you mix thoroughly mix the ingredients to avoid seeing bits of sour cream in the salad. Good taste. I think it easily serves 12, probably more like 14-16. Makes alot.

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

I agree- you need to change the temperature. A 6lb roast will take about 1 1/4-1 1/2 hrs at 325`. Use a working meat thermometer to check for doneness at 155-160`. It is a beautiful presentation! I used dried apples instead of apricots, and also dried cherries(yum). My sauce did not come out "saucy" but more "brothy", but it tasted good, and I agree it should be doubled to have enough. I will make this again! Thanks for sharing.

Spinach Lasagna II

For those of you who are Spatini spaghetti sauce fans, you are probably upset that you can no longer find it, as I used it exclusively for this recipe and always thought it "made" this lasagna dish. This is such an awesome meatless lasagna and I have made it SO many times and people ask me for the recipe. I substituted McCormick's Salsa mix instead and it is not bad, though not Spatini. HAS ANYONE FOUND A SUBSTITUTE FOR SPATINI???? I am disappointed they are no longer making it.

Southern Style Thanksgiving Green Beans

These are very good and will make again. However only cooked 1 hour instead of 4 and came out great. I prefer to not cook green beans such a long time. Ham hock and onions make this recipe!

Three Cheese Garlic Scalloped Potatoes

Superb (and very rich) scalloped potatoes. As suggested I also used part milk instead of all cream, omitted butter, used grated gruyere instead of provolone, sliced potatoes using processor and came out great and plenty rich. Feeds alot & and great for dinner parties. Can hang out in oven a while and not dry out. Will definitely make again. Thanks for sharing this one.

Pumpkin Bread

Delicious. Check 5x9" loaves at 65-70 mins, not 90 minutes. Makes 4 mini loaves that only take 40-45 mins to cook. Very good and moist.

Kalamata Pork Tenderloin with Rosemary

This quick and easy recipe is great for something different to do with pork tenderloin. i forgot to add the lemon zest and it still tasted great. i did slightly reduce the black olives since it is very "olivy" but i like black olives. would also taste great without the olives.

Apple Cider Sauce and Pork Loin Chops

This recipe is very easy and tasty. I did not have frozen cider and used regular apple cider, and they came out delicious and moist. Cooked 375 for less than 20 minutes. Forgot to add sherry and still great. The more you season the chops, the better they are. Great combination of spices. Served with mashed sweet potatoes and buttured white acorn squash (which i decided I like better than the green acorn squash). I will definitely make again, and thanks for tasty, quick recipe for pork chops.

Cola Pot Roast I

This is very good. I used garlic salt so omitted the salt. As suggested, I also added basil, marjoram and oregano to regular diced tomatoes and cooked in crockpot on low for 6 hrs- plenty tender. Cozy food that is great with rice.
