Dried Cherries, Pecans and Rosemary Brie en Croute

Reviewed: Dec. 12, 2010
Delicous and easy! I subst. craisins and pecans instead. I took this to a Christmas party and if three others had not also brought a baked brie, I think it would have been gone.

Beer Braised Irish Stew and Colcannon

Delicious!! The stew is really good served over the colcannon. I used lager since that is what I had and it was still delicious. Thanks for sharing.

Denise's Peanut Chicken

Reviewed: Nov. 20, 2010
Delicious and easy! As someone suggested, I added about 1c. peanut butter to the sauce, used boneless thighs, and also added a yellow pepper for color. I also threw in asparagus near the end since I had some to use up. Served with rice w/toasted pine nuts. I will definitely make this one again.

Oven-Fried Pork Chops

Reviewed: Nov. 20, 2010
Yummy and easy! My thick cut boneless pork chops were not quite cooked after 20 mins and needed a bit longer, but thinner cut chops would definitely be done. Loved the stuffing as a coating, but I did crush it first so it would adhere easier.

Squash-Apple Bake

Reviewed: Nov. 20, 2010
Yummy. A great way to serve butternut squash! I reduced the butter by 2 tbsps.,added some chopped walnuts on top and alternated squash and apple slices in the dish. The last 30 minutes I put a cover on the casserole to cook it down a bit as suggested. My family liked this and I will definitely make this again. Thanks for sharing!

Broccoli Chicken Roli

Reviewed: Nov. 14, 2010
Delicious. It does make more than you need, and I put extra filing in a small casserole and sprinkled with crushed ritz crackers. Just as good the next day for lunch!

Baked French Toast

Reviewed: Oct. 25, 2010
Outstanding!! Everyone loved it and I loved the sliced apples on top. I sliced up french bread before it got too hard and froze in a ziploc bag. Then I just pulled out the slices and made this recipe as is, except I did add one extra egg. The pan fed 5 and would likely have fed 6, but not 12. I made the yummy caramel sauce (and also added chopped walnuts on top), but I think maple syrup sounds like a great alternative as well. I used whole milk and some leftover cream, but will go lowfat next time with 1% milk. 3 apples is plenty on top. Wonderful for serving guests. Thanks for sharing, I will definitely make this one again!

Luscious Spinach Artichoke Dip

Reviewed: Oct. 9, 2010
I took this to a potluck dinner party and it disappeared. I did add 1-2 ozs more cream cheese & served with scoop tortilla chips. I used lowfat sour cream, lowfat mayo and 1/3 fat cream cheese--every bite was eaten! I will definitely make this again and will likely double it next time. Thanks for sharing this healthy and tasty hors d'oeuvre.

Death by Chocolate Mousse

Reviewed: Sep. 30, 2010
I followed another reviewer's suggestion and only made the mousse part, and served in painted martini glasses (for our family BD dinner for my son). We all loved this, and yes it is rich. The food processor method is easy. Thanks for sharing a winner!

Delicious! Toasted almonds add a great taste. Would have never thought to add whipped cream and it really adds richness.

Summer Lamb Kabobs

Delicious marinade! Thanks for sharing. Used it on both lamb and chicken kabobs. Omitted the pineapple & maraschino cherries since didn't have them, and also the butter.

Curry Kabobs

Reviewed: May 26, 2010
Very good and so easy. I doubled the curry and it was not too strong. Using low fat mayo helps cut the fat here. I added green pepper to the skewers too. Thanks for sharing!

Thee tasted great but stuck horribly to my aluminum foil lined pan (that I forgot to spray with Pam). Will try again with Pam.

Delicious! I did not have the red pepper garnish and it looked a bit plain. But it tasted great.

White Cheese Chicken Lasagna

Reviewed: May 19, 2010
Outstanding- tastes very rich. My mother in law wanted the recipe immediately. I made mine a day ahead and popped in the oven the next day. Used no cook lasagna noodles with no problem. I will try no fat ricotta next time, I think it will taste just as rich. Only used 1 box of spinach and it was plenty. Great make-ahead dish to serve company and a nice lasagna alternative. Thanks for sharing!

Penne Pasta with Spinach and Bacon

Simple and delicious. Made mine with bow ties since that is what I had on hand. Love the idea of just wilting the spinach with hot pasta.
