Lemony Quinoa

Delicious and tasty. I doubled for a potluck and it was all gone. A really great side dish to have for your friends who cannot eat wheat & for vegetarians. I used the tri-color quinoa from Trader Joes and as suggested, chicken broth instead of water. This recipe is sort of like a taboulleh for quinoa. I did add an entire diced English cuc & three plum tomatoes, and not quite as much parsley as called for, about 1/2 c and salt. Lots of color and great taste! A great way to use this grain.

Blue Cheese Chicken Wing Dip

Delicious! Took this to a SB party this past Sunday, and was 90% gone on a buffet of many other things. I did follow others suggestions. I was doubling for a crowd that incl. kids, so I only used 2/3c Franks and 2/3c blue cheese dsg...also used lo-fat cream cheese, lo-fat blue cheese dsg, & omitted butter. Just mixed it all up and topped with shredded cheddar/colby jack cheese, since that is what I had on hand and cooked in 9x13 pan..never missed the fat and it was YUMMY!!! Served with celery sticks and scoop tortilla chips. I will definitely make this again for a crowd and next time will slightly increase the Franks sauce to kick it up. THANKS FOR SHARING!

Best Bread Pudding with Vanilla Sauce

Delicious! Thanks for the great tip of using frozen old hamburger or other rolls from your freezer! A great way to use up old bread. I toasted all of my cubed bread and no sogginess. Tip: I think I cooked the sauce too long, since it tasted a bit eggy and custard-like. Be careful to not overcook your sauce.

Zucchini Ranch Meatloaf

Outstanding meatloaf recipe! I would have never thought of adding shredded zucchini to meatloaf and it adds a wonderful healthy moistness. I did not even use sauce on top and still loved it. I will definitely make again when making meatloaf, thanks for sharing! Tip: you can now buy seasoned ground turkey in the store which is delicious in this recipe- cut back on salt and other seasonings.

Homemade Albondigas Soup

Tasty, comfort-food soup that gets kudos for having easy ingredients you likely already have on hand. Try not to overcook the meatballs as I did. They do not soften up in liquid like chicken does...definitely undercook them.

Mexican Rice II

This rice is a perfect foil for a spicier topping/main dish. If you're looking for something that won't overpower a main dish, this is it. Otherwise I think it is a bit bland on its own, and needs "something" to zip it up.

Mexican Lasagna

5 stars for taste and ease! Served with chopped avocado for garnish- yum. Added a can of refried beans, as a layer on top of tortillas, then meat, and used shredded low-fat and regular Mexican cheese for ease, at least double the amount. Great way to use up corn tortillas in your fridge. Hungry teens loved this one. Thanks for sharing!

Different Chicken Divan

I too halved the mayo and curry and thought it was great and easy. I would start off with 1 tsp of curry and add to your taste. I made two of these at once to also take someone in need of a meal. Just provide some uncooked rice in a baggie and they have a great casserole for dinner. Thanks for sharing!

Lemon Basil Pesto Flat Iron Steak

I am rating this bc I only made the lemon pesto. I was looking for a good pesto..YUM!! I don't like heavy garlic so I only used 2 cloves and it was plenty. Why didn't I think of adding a little lemon juice before?!? It adds brightness to the taste and keeps that wonderful green color..I will always add it now! Thanks for sharing.

Everyone loved this bread. I agree with the prior reviewer that substituting 1c brown sugar is great. I only used 2c sugar total and it was plenty sweet. Thanks for sharing!

Black Bean and Corn Quesadillas

Good vegetarian meal! I also added mushrooms and green pepper since they needed to be used up in my fridge. Used monterey jack cheese since that is also what I had. Great recipe to improvise. Leftovers can be heated easily in microwave next day. Thanks for sharing!

Slow-Cooker Chicken Tortilla Soup

Delicous and easy! I halved the cumin/chili pepper for kids and it was perfect. Really good with the toasted corn tortilla strips on top and also sliced avocado- yum! I used leftover rotisserie chicken.

Apple Cranberry Crisp

Very good. However, there was no way 10 apples fit into my 9x13 pan, so I had an extra 8x8 pan too. Not too sweet which is what people liked about it. Very nice alternative to regular apple crisp, by adding the cranberries. I used fresh ones and made my own sauce first.
