Slow Cooker Mashed Potatoes

Very good the first time served, but I had made two pans and froze one for later. After heating up the defrosted pan, I did not think it tasted nearly as good, a bit dry, which surprised me given all the fat in it. This is a great way to serve mashed potatoes to many people quickly!

Awesome Sausage, Apple and Cranberry Stuffing

I only gave this 3 stars since while it was good, I wasn't as wild as I thought I would be about the apples in it. Also for those who use their stuffing in soup after TG (like I do) I think its better to choose a non-fruit variation.

Delicious Ham and Potato Soup

Delicious! I used 32 oz carton of chicken bouillion instead of water for more flavor, and decreased butter to 3T. and flour to 4T. to slightly reduce the fat.

Veronica's Hot Spinach, Artichoke and Chile Dip

I did omit jalapeno pepper, and used low fat cream cheese. Delicious! The classic spinach-artichoke dip is always a hit wherever I take it.

Black-Eyed Pea Gumbo

Very good and heathy. I used yellow pepper as a preference. I accidentally used hot tomatoes with chilis in one can, which really zipped it up. My husband loved that. Planning to freeze leftovers for lunches at another time!

Savory Couscous Tabbouleh

OUTSTANDING. I used Israeli (pearl) couscous and seasoned feta. I always decrease olive oil by 1T. & find I don't miss it. You can eat this for several days. Thanks for sharing.

Pork Tenderloin with Mustard Sauce

Substituted Makers Mark whiskey for the wine, and didn't need the mustard sauce...simple and delicious! Served with sweet potatoes and butternut squash...Great weeknight entree..thanks for sharing.

Easy Turkey Chili

Really delicious! I think what surprised me was how much I like the refried beans and how they enhance the consistency of the chili. I used vegetarian beans and diced toms.with garlic and onions. I also added some chopped celery. I also used dried beans since that is what I prefer for texture, and they hold up better in chili than canned. A great, tasty, and quick recipe. Thanks for sharing!

Zucchini Pasta II

Made for church potluck meal and everyone loved it. I did follow suggestion to double cream cheese, and added lots more dried spices when cooking the vegetables first, since the dish needs it after you add plain chicken and pasta. Chopped fresh basil and shredded parm on top are delicious, thanks for sharing.

Black Bean and Salsa Soup

5 stars for quickness of recipe, taste and being healthy! Like others suggested, I added sauteed onion, carrot and celery, and some shredded leftover turkey for more substance. Sliced avocado on top elevates this to REALLY GOOD. My husband prefers chunky soup, so I did not puree. Delicious, thanks for sharing.

Blueberry Pound Cake

Took this to a potluck dinner- everyone loved it. A nice and different way to use blueberries. Be careful to not over bake pound cakes, I took mine out around 73mins or so, but started checking before then. Thanks for sharing!

Chocolate Cornstarch Pudding

Thanks to tips from past reviewers! I used half brown sugar, half cornstarch for softer texture (not jello-like), boiled for several mins to get rid of cornstarch taste, used half pure vanilla almond silk milk (really yummy)and my own addition of 3/4tsp freeze dried coffee (read before this intensifies chocolate flavor). YUM, thanks for sharing.

Slow-Cooker Corned Beef and Cabbage

I'm still trying to find a "boiled" dinner recipe that we all love. As boiled dinners go, this one is pretty good and so easy. I do like cooking the corned beef in beer. I halved the recipe & cooked on the stove in dutch oven pan for over 3 hrs. I added potatoes and carrots the last 45 minutes and omitted the cabbage.

Lemony Quinoa

Delicious and tasty. I doubled for a potluck and it was all gone. A really great side dish to have for your friends who cannot eat wheat & for vegetarians. I used the tri-color quinoa from Trader Joes and as suggested, chicken broth instead of water. This recipe is sort of like a taboulleh for quinoa. I did add an entire diced English cuc & three plum tomatoes, and not quite as much parsley as called for, about 1/2 c and salt. Lots of color and great taste! A great way to use this grain.

Blue Cheese Chicken Wing Dip

Delicious! Took this to a SB party this past Sunday, and was 90% gone on a buffet of many other things. I did follow others suggestions. I was doubling for a crowd that incl. kids, so I only used 2/3c Franks and 2/3c blue cheese dsg...also used lo-fat cream cheese, lo-fat blue cheese dsg, & omitted butter. Just mixed it all up and topped with shredded cheddar/colby jack cheese, since that is what I had on hand and cooked in 9x13 pan..never missed the fat and it was YUMMY!!! Served with celery sticks and scoop tortilla chips. I will definitely make this again for a crowd and next time will slightly increase the Franks sauce to kick it up. THANKS FOR SHARING!

Best Bread Pudding with Vanilla Sauce

Delicious! Thanks for the great tip of using frozen old hamburger or other rolls from your freezer! A great way to use up old bread. I toasted all of my cubed bread and no sogginess. Tip: I think I cooked the sauce too long, since it tasted a bit eggy and custard-like. Be careful to not overcook your sauce.
