Slow Cooker Baby Back Ribs

I have been a slave to ribs for 20 years. This recipe has given me a new lease on my cooking life. I followed the advice on here and did a spice rub on the ribs before tossing them into the slow cooker with a beer, onions and garlic. Literally fall off the bone tenderness with great flavour. If you like ribs and also like having free time, try this recipe.

Cheesy Ham and Hash Brown Casserole

I made this for dinner tonight with some slow cooker ribs. The only change I made was to use light sour cream, in an attempt to cut the calories. The recipe makes a lot...I was initially made fun of for the huge quantity but at this point the leftovers in the fridge have already been divided and claimed. If you have some teenagers in your life that you want to win over, this is the dish. Basic, yummy comfort food. Good with for breakfast, good for dinner, good as a bedtime snack according to this household.

Slow Cooker Chicken Stroganoff

I've made this dish 3 times in the last month, primarily because it is such a huge hit with the teens in this house. It gained the status of 'best dish ever!!!!" from one enthusiastic family member. Corn is nice on the side, and I tend to cook up a bunch of green veggies as well just to add to the nutrition. It is perhaps a bit bland for my palate, but hey the kids are enthusiastic and there is zero complaining when I make this dish so I'm just going to run with that.

Slow Cooker Buffalo Chicken Sandwiches

I made this tonight for dinner and it was a huge hit. I was short on time so cooked it in a big frying pan with a lid and it turned out great! I had only glanced at the recipe so inadvertently mixed up a couple of things - I cooked the chicken in the butter and ranch mix and then added the bottle of hot sauce. Simmered on low for about an hour and then shredded the chicken. We made it into wraps with cheese, tomato and lettuce. The tomato helped cut the heat of it for the wimpier member of our family (me). I had the hot sauce sweats for about an hour after but that just added to the greatness of it. I've already decided to use some of the leftovers in the morning with a poached egg, diced tomato and lettuce on a corn tortilla.
