Grandmother's Pound Cake II

Was an excellent pound cake for our Memorial Day picnic this year. It paired well with a lemon pie filling... The sweet and sour complimented one another. Will definitely make it again, so easy!

Fried Cinnamon Strips

I liked the idea of using pre-made tortilla wraps and giving them that extra crunchiness. I served mine under pistachio ice cream. The two issues that occurred with me were not having enough sugar (1/2'ed the recipe and only had about 1/4 c. sugar instead of half a cup) and having the burner temp. too high as I fried them... lets say some of them were a little crispy.

Cream Corn Like No Other

Probably won't be buying creamed corn again unless I am in a pitch for a quick can. I loved this recipe and how creamy, thick, is was. I ran out of flour during the recipe so I added around 1/2 c. of cornmeal and it thickened amazingly.

Mom's Applesauce Pancakes

They were good. I wish there was more apple flavor though. I used a local honeycrisp apple apricot apple sauce and it added that right amount of sweetness to the pancake. They were fluffy and light. Good breakfast for dinner Friday night.

Chef John's Sweet Potato Casserole

I tried this as a side for Thanksgiving '13. It was delicious, the flavors balanced and came through well with one another. The crunch from the topping makes it even more satisfying. The whole family liked it even some who seemed hesitant.

Semlor (Semla)

My grandmother, whose Swedish, loved them. I certainly did too and it was a great experience discovering a part of the Swedish culture, since I do have that ancestry. The bread itself is amazing and I might make it plain and eat it the way they do in Sweden, with warmed milk in a bowl. These Semlor are definitely a keeper in my book. I dashed mine with both powdered sugar and some cinnamon.

Oatmeal Peanut Butter Cookies

These cookies were pretty good, yet I did cut back the sugar to 3/4 cup to get more of a peanut butter flavor (which I still wish there was more of... I'm obsessed with PB), increased the oats, and used all unsalted butter. The cookies came out excellent even with the modifications and they lasted in my house a good while (I probably exceeded the yield because of the size of my cookies) and they had a nice crunch to them with a moist inside. One or two a day was a very delicious treat!

Blueberry, Banana, and Peanut Butter Smoothie

It turned out to be a very satisfying breakfast on its own. I think all the flavors balanced themselves out well. I did use PB2 peanut butter powder because that was the peanut butter I had on hand and I threw in a couple pitches of spinach greens. I will most likely make this again sometime in the future!

Chicken and Mushroom Chimichangas

I did not have one complaint with these. I made the recipe as is except I could not find 'Mexican Oregano' so I subbed for regular Oregano instead and only topping mine with sour cream (which pairs amazing with the flavors that come from the filling). One thing that that I did differently was shred the chicken a little so the pieces weren't as large. My father did have a complaint that the pieces should have been put through the food processor. All went well in the end though and I paired them with oven roasted russet potatoes, Lima beans, and cornbread.
