Pork Chops with Apple Cider Glaze

The hardest part of this recipe was not over cooking the pork chops. I used apple juice instead of apple cider. The flavor was great! I'm normally not a fan of pork, but this recipe has changed my mind.

Cilantro-Lime Dressing

I just made this dressing and it is delicious! I followed the recipe, except I used a little less than 1/3 cup of honey. I put all the ingredients in the blender and it turned out great! Used it on a kale salad. I will definitely try using it as a marinade on chicken.

Zucchini Boats on the Grill

Super tasty on the grill! Left out olives and chiles because I didn't have them. I put them on the grill open faced. The bread crisped up really nicely.

Cucumber-Carrot Salad

What a great summertime salad! Goes really well with chicken. I made the recipe without olive oil and used sesame oil instead.

This was such a flavorful dish! I made sure to cut up the patatoes quite small so they would cook quickly. The only change I made was I used plain yoghurt instead of heavy cream. So delicious!

Kale and Feta Salad

This salad is soooo delicious! Massaging the kale with sea salt completely changed the way I feel about kale! I used red delicious apples and cranberries instead of currants.

The Best Thai Coconut Soup

Absolutely LOVE this recipe. No complaints from anyone. I only changed a couple of things. One, I live in a small town so they don't sell lemon grass (or the paste) so I had to leave that out. I also added a teaspoon of cayenne pepper, because we love spicy foods! I also am not a fan of shrimp so I left the shrimp out but instead added a package of rice noodles. I boil the noodles first, then run them under cold water so they don't stick, then add them to the soup. Delicious!!

Mexican Quinoa

I absolutely LOVED the flavor. I followed another review and served it with sour cream and cheddar cheese. My husband even loved it. I used the "hot" rotel so I only used half a jalapeƱo. My only problem was that the quinoa didn't cook properly. It stayed kind of crunchy. This was my first time cooking quinoa so I'm sure it was my fault and not the recipe.
