Cream Cheese Chicken

Reviewed: Oct. 4, 2005
I followed many of the previous suggestions. I combined spinach, garlic, and reduced fat cream cheese for the filling and refrigerated it to make it easier to spread. Also substituted honey mustard for dijon, omitted the brown sugar, and used bread crumbs instead of nuts. We just finished eating and I've already gotten multiple requests for the recipe!

Grilled Lamb with Brown Sugar Glaze

Reviewed: Jun. 24, 2005
I substituted the brown sugar with condensed milk, left out the tarragon, and baked the lamb chops. They came out perfect. Will definitely make this recipe again.

Marrakesh Vegetable Curry

Reviewed: Jan. 25, 2012
Very happy! I'll definitely make it again. I was skeptical when the vegetables were all in the pot in the beginning, but it turned out great and my family is enjoying it for lunch today. Here's how I altered the recipe: Omitted carrots & zucchini; Substituted raisins with sliced dried figs, curry powder with chili powder, cayenne pepper with ground black pepper, and 1 cup OJ with juice from 2 sweet oranges. Also doubled (probably tripled) the spices, and used half a red onion instead of a whole onion. I let it cook covered at least 45 minutes, mixing it here and there.

Cinnamon-Raisin Peanut Butter Sandwich

Reviewed: Dec. 7, 2010
Just made it for a night time snack. I'm so happy now. I made it without raisins and it was amazing. Doesn't need anything else.

Portabella Burgers with Avocado Spread

Reviewed: May 3, 2010
Just ate this for lunch! I made several changes to the recipe. I used two portabella mushrooms instead of four, but kept the quantities of the remaining ingredients the same. The mushrooms and onions were cooked simultaneously. Didn't have yogurt, so I used miracle whip; omitted the red pepper; instead of minced garlic I used garlic powder; substituted hamburger buns with fiber one country white bread; and instead of using half the avocado for the mixture, I used the entire avocado and omitted the avocado slices. It came out a bit sloppy with avocado mixture coming out of the sandwich, but it was delicious and very fast to make.

Fabulous Cilantro Pesto

Reviewed: Oct. 10, 2013
This is fabulous! I used pecans and lemon juice instead of vinegar. The family, especially my 10 month old, loved it.

Simple Turkey Chili

Reviewed: Apr. 23, 2013
Left out the beans, paprika, and salt. Instead of 2 cups of water I used 1/2 cup of turkey stock. Added one package of frozen kale, 2 teaspoons of minced garlic, and 1/2 teaspoon of cinnamon. I sauteed the onions, garlic and kale in olive oil. In a separate pan I browned the turkey. When the turkey was ready I combined the turkey with the kale and added the spices. I used this as a filling for flour tortillas.
