Simple Whole Roasted Chicken

Very enjoyable, a nice change from my usual herb-roasted or citrus chicken. Since this recipe popped up in my inbox on a day I planned to roast a chicken anyway, I decided to give it a try. I tend to agree with others who think these spices are a little offbeat for a chicken recipe, but I didn't mind it, the chicken was moist and flavorful. Substituted the sugar with honey but otherwise made it as-is.

Moroccan-Style Stewed Chicken

This wasn't bad although I agree with the reviewers who said something was missing. I followed the recipe at first, tasted it and then added salt, a little turmeric, and some ginger root. I served the dish over rice and garnished with fresh basil and pineapple slices. I found the sweetness of the recipe complemented the pineapple well.

Bean and Kale Ragu

This could become a regular dish for me. I stumbled upon this recipe while looking for other ways to use kale (I have six overproducing plants in my garden this year). Followed the recipe except I used ghee for olive oil, chicken stock instead of water (as suggested in other comments) and omitted the onion powder. I also diced fresh tomatoes instead of using tomatoes from a can, and served over white rice. Everyone loved it--I took it to a friend's house and not only my kids but theirs finished their plates. Some asked for more! It's hard to find healthy dishes that my teenagers will eat. Plus my wife and I enjoyed it. I'll definitely make this again.

Artichoke Chicken

Simple, quick and delicious. I tried this on some leftover chicken that also had tomatoes in it--the tomatoes blended very nicely with this recipe. Served it over rice. Other reviews made a good suggestion sour cream in place of mayonnaise, or a blend. I went with the former because I rarely have mayonnaise on hand. Still turned out great.

Garlic Chicken

Simple and quick, definitely making this again. Instead of bread crumbs I used corn meal (GF) which still resulted in a tasty dish. Fresh parmesan highly recommended--I bought a jar instead of grating it, for convenience.

Chicken Biryani

Great recipe. This was my first attempt at Indian cuisine and it was delicious. It takes some time to prepare but the results are worth it. I substituted olive oil for the vegetable oil and white rice for the basmati rice, but otherwise I followed the recipe as-is. My kids, who are both picky eaters, loved it. One mistake I made was using canned tomatoes--I added the entire contents of the can instead of draining the tomatoes first. This added excessive fluid to the gravy mixture resulting in longer cooking times before it would thicken. Next time I will drain and add the liquid only as needed. I bought fresh mint per the recipe and I'm glad I did--you can taste it in the baked dish and I think it really helps bring out the flavor.
