Garlic-Lemon Double Stuffed Chicken

EXCELLENT! I didn't change anything about this recipe and my family LOVED it. It was so delicious and surprisingly easy! Definitely a keeper!

Mrs. Sigg's Peanut Butter Cookies

I made these for a coworkers birthday. My husband LOVES chocolate chip cookies - but could not keep his hands off these!! He actually said they were the BEST peanut butter cookies he's ever had. I can't wait to see what my coworkers think. I did make some changes by increasing the peanut butter to 1 1/2 cups, and rolling them in sugar before baking. WOW!! YUMMY. I will be trying all of Mrs. Sigg's cookie recipes!

Artichoke Dip I

WOW!!! I made this for Christmas and it was gone quick! Everyone loved it. I only made a few changes by adding 2 garlic cloves instead of powder, and I also added mozzarella cheese to the top so that it browned and was all yummy and crunchy. :) I tore up some french bread, toasted it in the oven and served it with the dip. I don't think there was one person at the party that didn't request the recipe.

Baked Asparagus with Balsamic Butter Sauce

WOW!!! Loved it! Hubby says it's the best asparagus he's ever had. I am emailing my mom and sister the recipe right now. The only thing I did different was add a little garlic powder with the salt and pepper before baking. yum, yum!!

Chicken Marsala

YUM, YUM, YUM!! My husband always orders this at restaurants so I was very reluctant to make it at home for him. He absolutely LOVED it and said I "outdid myself once again". I made a few changes by adding garlic and chicken broth as other reviewers recommended. I also doubled the sauce and served it with angel hair. I plan on making this regularly. Thanks for the recipe!

Slow-Cooker Chicken Tortilla Soup

I love this recipe! I feared it would have too much of a "canned" flavor, but it is fabulous! My family loved it!! I add a big can of the enchillada sauce because I think it tastes more flavorable, but that might be too intense for others. Definitely try - you will not be disapointed!

Awesome Slow Cooker Pot Roast

I love this recipe on a cold day. I do make some minor changes though by adding a packaged pot roast seasoning envelope from the store and cutting back on the onion dip seasoning envelope. Try it, you will love it.

Broiled Tilapia Parmesan

Yum, Yum!! Made this for the family tonight and they absolutely loved it! 10's all around. I didn't have celery salt, so I used garlic salt instead and it was still yummy. Also substituted parmesan with parmesan reggiano because it's what I had on hand. LOVE IT

Yummy Sweet Potato Casserole

Made a double batch of this for Thanksgiving this year and everyone loved it! They wouldn't let me leave without giving up the recipe!! Even people that didn't like sweet potatoes commented on how good it was!! There was nothing left at the end of dinner! MAKE THIS!! (I made it just as the recipe stated with no substitutions)

Chocolate Chip Banana Muffins

YUM YUM. I used applesauce in place of the oil, splenda in place of the sugar, and only a 1/2c. of chocolate chips to keep the calories down. Very moist and delicious.

Kerry's Beany Salad

YUM YUM!! I made this Sunday night to eat for lunch all week and it was so yummy! I used all barley (no rice) because I wanted a healthy grain salad. I omitted the kidney beans because I don't like them. I also didn't have red wine vinegar so I used balsamic vinegar, and cut back on the oil and it was still good. Very fresh flavors. Even hubby liked it! Thank you!!!!!

Quick and Easy Green Chile Chicken Enchilada Casserole

YUM!! I put my chicken in the crock-pot this morning with water, some chicken bouillon cubes, big chunks of onion, whole cloves of garlic, and chunks of celery. Seasoned it with a little garlic salt, rosemary and black peppercorns. Came home and shredded the chicken and diced up some of the onion and mixed it with a little more seasoning. I did char the tortillas, and I didn't have any sour cream so I used some non fat plain yogurt, which worked well. It was REALLY good and looked so great. Give this recipe a try, you won't be disappointed!!

Easy OREO Truffles

REALLY GOOD. I followed the directions exactly and refrigerated them overnight before dipping them in chocolate. I found that resting them on the edge of a fork and spooning the chocolate over the truffle worked best. I brought them to a bridal shower and they were gone in 5 minutes.

Slow Cooker Buffalo Chicken Sandwiches

Hubby loved this. I followed the recipe exactly and we did not find it too salty. Was a little spicy but oh so good and went great with a cold beer! :) We will definitely be putting this in with our regular routine recipes.

Quick and Easy Chicken Noodle Soup

I made this for my sick husband tonight and he loved it. He said it was the best chicken noodle soup he's ever had. I made a few changes by using a rotisserie chicken (white meat only), using chicken bouillon cubes mixed with water instead of chicken broth, sauteed the carrots with the celery and onion and added about 4 cloves of garlic. I also increased the spices. Fabulous - can't wait to make it again!

Artichoke Chicken

Really good. My substitutions: I made mine with non fat plain yogurt instead of mayo to cut the calories. I added 3 cloves of fresh garlic to the artichoke mixture and I also used marinated artichoke hearts that I squeezed completely dry so that there was no extra liquid in the pan. I pan seared my chicken first with salt, pepper and garlic powder and then topped with artichoke mixture to bake. Looked pretty and tasted great. I will be putting it in our regular rotation.

Summer Berry Parfait with Yogurt and Granola

I used non fat plain yogurt instead of vanilla (sweetened with splenda) and I was our of granola so I used chopped peanuts instead. Very good!
