Zesty Rice 'N' Bean Casserole

My kids love this meal!! I've been making a similar version of this meal for awhile, but I was making everything separate. So, I loved the idea of cooking it all together and it came out wonderful. There is no need to cook this dish longer in the oven. One pot meal. It's only rice, beans and tomatoes. I didn't use green peppers and mushrooms as I like a more mexican flair. I added green chiles instead and used rotel diced tomatoes with green chiles. The rice did need a little more liquid added to finish cooking. Once done, I add cheddar cheese to each individual plate and top it with crisp zesty tortilla strips

Slow Cooker Carolina BBQ

Awesome! I'm from NC and this is just like you would find in a restaurant. Better than Smithfield's Chicken and Barbecue and oh so easy to make!

Broccoli Chicken Divan

Really loved this recipe! I have made it several times. Followed the recipe exactly the first time and it was wonderful. Since there was quite a bit of sauce, the second time I made it I decided to make it into a casserole and added 8 oz of egg noodles, increased the milk to 1 cup and added 1/2 cup of sour cream to the mix and put it in a casserole dish and cooked at 350 for 20 min. I've also subed ham (cubed) for the chicken and made ham, noodle, broccoli casserole! Kids love it.

Parmesan Noodles

This was pretty good. I used mini bow-tie pasta and omitted the green onion. When I added the parmesan cheese it got really thick, so I added some milk to make it creamier, just enough to stir it with ease. I think next time some fresh basil would add a nice touch.

Cake Balls

These were easy to make and not time consuming at all. I used a TBSP and scooped out the "dough" and placed them on parchment paper. I didn't worry about shaping into balls at that time. By the time I was finished, the dough was all cooled off and I went back and rolled each ball between my hands to make them smooth and round. Very easy and not too messy. My 3 & 5 year old enjoyed putting the sprinkles on after I coated them in chocolate. They liked the cake balls, but I just thought they were okay. Not a fabulous dessert. Since Valentine's Day is near, I used Red Velvet cake and Cream Cheese frosting and covered them in white chocolate.

Mandarin Orange Cake I

Kinda disappointed in this cake. The topping was wonderful, however; the cake had no orange flavor whatsoever! It was very moist, but didn't taste any different than your regular boxed yellow cake. Next time I will try adding some orange extract.

Baked Omelet

Excellent! Very tasty and healthy compared to other breakfast casseroles. I added mushrooms, onions and diced green & red peppers and sautéd in 1 TBSP of buter, salt & pepper until soft. Omitted the minced onion and mozzarella cheese and used all cheddar. My egg bake was still liquid in the center after 45 min of cooking, will probably use a bigger pan next time.

Seven Layer Taco Dip

I knew when I was putting the salsa on that it would make it watery with too much liquid from the salsa, but decided to follow the recipe anyway because of the reviews. Next time I will find a recipe with a layer of guac instead of salsa!

Cherry Coconut Bars

Wow! Absolutely the best tasting dessert. I too added chocolate chips, 1/4 Cup, and it was a very nice addition. I tried putting the crust in the size pan that was called for, but it barely covered the bottom of the pan, so I ended up cooking it in an 8x8 and cooked it (crust & filling) for 40 minutes. Wonderful!!!

Baked Garlic Parmesan Chicken

I've been making this for years, but my recipe uses crushed cornflakes instead of bread crumbs. I also use 1/3 cup Grated parm & 1/3 cup Shredded. The freshly grated parm adds more crunchiness.

Hash Brown and Egg Casserole

We thought this was excellent. I don't usually make breakfast casseroles, but this sounded good & easy! I cut the hash browns in half and used a bag (20 0z)of Simply Potatoes Southwestern Hasbrowns, which was enough to cover the bottom of the dish. Increased the eggs to 9 (or 10) and doubled the milk. I like lots of flavor, but didn't think it was necessary to add onion & garlic powder, especially since the recipe calls for (real) onion. I did however use salt & pepper and our spicy pork sausage. I didn't layer the cheese, I just poured it all on top to cover the casserole. So yummy and can't wait for the convenience of having it as leftovers during the week. Anything to make the morinings easier while I'm trying to get the kiddies off to school!

Honey Baked Chicken

So simple and so gooood! I used 4 boneless chicken breasts and seasoned them with Paula Dean's house seasoning (which is salt, pepper, garlic & onion powder) and browned them quickly in olive oil. I also increased the mustard to 1/4 cup and used spicy mustard. I combined the sauce ingredients in a pot and then poured it over the chicken breasts and only cooked for 25 min @ 350. So tender and great flavor!

The taste is fantastic, but the bottom is too soft and mushy. It doesn't hold its shape. There needs to be some sort of hard crust on the bottom.

Awesome Pasta Salad

WOW!! This is amazing. This is definitely a good summer meal. I used tri-color pasta, omitted the green pepper, added some small peperoncinis, mild banana pepper rings and topped with shredded parmesan cheese. My favorite italian dressing is Ken's Steakhouse Lite Northern Italian dressing with basil and romano. It's wonderful with no sour tang to it.

Roast Sticky Chicken-Rotisserie Style

The best rotisserie chicken! I just rubbed the spices on right before I cooked it and cooked it at 350 and 20 min per pound. Easy and quick!
