Creamy Chicken and Wild Rice Soup

This is our favorite soup. My kids love it! I always just cut up 2 chicken breasts into bite size pieces and brown them in olive oil, S&P. When that is done I put the chicken in foil and set aside. I add 2-3 TBSP of butter to the pot and sauté 1 minced onion, 2 garlic cloves(minced), 2 stalks of celery (diced) and 1/3 c. of minced carrots and S&P. Once softened, I add the flour and mix it until the veges are coated. I add the chicken stock and about 3 cups of white rice and about 1 tsp of thyme. Then I add the water & milk (instead of heavy cream-it still comes out thick & creamy!). Cook until thickened about 10 minutes and then I add the chicken. The best!

Foolproof Rib Roast

I did it! This was my first time cooking a rib roast. Make sure to ask your butcher to "cut and tie" your roast. It makes it easier to cut and serve. I was a little nervous because it was so expensive, but it turned out perfectly! I cooked a 10.67 lb. roast and didn't change the cooking time whatsoever. I did put a little olive oil in my hand and rubbed it all over the roast. I sprinkled kosher salt, pepper & grated 2 cloves of garlic and rubbed that all over. I cooked it for the initial hour, 3 hrs siting in the oven, and 30 minutes upon turning the oven back on. I made au jus from this site called Beef Au Jus from chef John. It was so quick and easy and it was wonderful. Great smell and flavor. Everyone raved about the roast and "gravy". From now on, a standing rib roast for Christmas Dinner will be our new tradition.

Awesome Slow Cooker Pot Roast

we all loved it. I ended up cooking the roast for 5 hrs on high. I used 1 can of cream of mushroom, 1 can of beefy mushroom, sliced mushrooms, 1 minced garlic, 1 onion sliced into rings and thyme. Instead of water I used 1 cup of beef broth and 1/4 of red wine. Put olive oil on the roast and coated with kosher salt & pepper.

Fresh Strawberry Upside Down Cake

WOW!! Every strawberry season I hunt for the perfect strawberry dessert and have yet to find it, until now! This was the most delicious strawberry cake I have ever eaten and by far, the easiest and quickest to prepare. Followed the recipe, although I did not measure the strawberries, I just filled up the bottom and I used a bundt pan. Soooo good!!!

Christmas Wreath Cake

I have never made fruitcake before so I followed the directions EXACTLY. The cake was dry and crumbly. I cooked it for two hours per the instructions and it was way toooo long. I was very disappointed. The batter was amazingly good. We loved the batter, so I will try making it again and cutting the time in half at least!

Seared Sea Scallops

I followed direcions with the exception of squirting the lemon juice afterwards, which I will definitely try next time. The scallops were great! I tried one right after it was done searing and it was excellent, however; the ones I put in the oven to keep warm got SOGGY!! I was very disappointed. Next time, I will use a bigger pan or two pans and not put them in the oven!!! I sparayed my pan with non-stick cooking spray before I put in the olive oil and I did not have a problem with the flour mix falling off or sticking to the pan. Can't wait to make it again!

Chef John's Chocolate Lava Cake

oh wow!!!! This is unbelievable! My daughter and I were watching MasterChef and they made a chocolate lava cake. I had to make it, so I went to my favorite website! This recipe was so simple and quick. I was amazed. I melted 4 oz of tollhouse chocolate chips with the butter because that was all I had. It tated like the ones I've gotten at a restaurant! My batter was not thick and I'm sure it is because I used my KitchenAid mixer and didn't attempt to mix it by hand. I did not put it in a bag (i just didn't see the point), I did not refrigerate and I didn't cook it in a pan of water. They did none of that on MasterChef :). Why make more work for yourself. Everyone's oven is different, but I cooked them for 11 min. Next time, I will cook it 1 min more. I will definitely be serving this when I have company over for dinner and to make it easier, I will refrigerate the batter so that all I have to do is pop it in the oven when we are finished eating.

Strawberry Trifle

I was afraid that it would just taste like fruit on top of pudding, so I made a few slight changes. I mixed vanilla pudding, 1 cup of milk & 1 cup of sour cream and beat until it thickened, then folded in a tub of cool whip (french vanilla flavored). Layered the cake cubes, FRESH strawberries & blueberries, omitted the bananas because they look yuck after a short time, then the "pudding" mixture. Not only was it delicious, but it was beautiful. It was the right amount of sweetness. It only lasted a day!

Pasta with Tomatoes and White Beans

This is fantastic with some additions. I sautéd 2 garlic cloves (minced),1 onion, chopped & 1 pkg of sliced baby bella mushrooms, salt & pepper in olive oil. When that was softened, I threw in the spinach and poured a cup of chicken broth over the mixture until wilted. Threw in the cooked pasta (used Rigatoni), Added Italian Seasoning, 1 can of petite diced tomatoes,1 can of Northern white beans and 1 package of turkey smoked sausage sliced thin and topped with parmesan cheese. Great meal!

Grilled Sausage with Potatoes and Green Beans

This was great! Can't wait to make it on our next camping trip. I omitted the butter and tossed the potatoes with olive oil, rosemary, thyme, garlic salt & pepper then added the green beans & sausage. Will add more green beans & sausage next time.

Chicken and Broccoli Braid

Excellent!! I made this for lunch today and everyone loved it! I've never made anything like this before, so I didn't deviate from the recipe too much except for only using 1/2 tsp of dill, which I mixed in the mayo. The 1/2 tsp of dill was perfect. I still tasted it, but it wasn't strong or overpowering. I also sautéd the chicken, onion, garlic and red pepper all together in olive oil then mixed everything together. I also cooked my fresh broccoli beforehand as well and ended up using more than 1 cup of it. Really yummy. I will be making this often!

Fabulous Wet Burritos

These were so yummy and quick to make. I don't think you could mess these up if you tried. I too omitted the tomato soup and I didn't have any chili, so I did without. So I just uesd a can of Hatch's tex-mex enchilada sauce and 2 TBSP of salsa. The sauce was still very good. In addition to the refried beans, I added a can of Bush's Black Bean Fiesta (grillin' beans). It really added a nice flavor! I made my burritos and put them in a baking dish and cooked for 10 min @ 350 to melt the cheese. My family loved it. I will be making this often!

Aloha Chicken Burgers

Wow! I loved this sandwich. I marinated the chicken with Kikkoman Teriyaki Sauce & Marinade. I put it in a ziploc bag and add 1 fresh clove of garlic, grated, and 4 green onions, sliced. I sprinkled brown sugar on the pineapple and grilled that for about 4 minutes. I used a thicker teriyaki sauce to brush on my chicken at the end. It was also from Kikkoman, but had sesame seeds in it. I took a taste of the chicken when it came off the grill and it was fantastic, however; when I put it on my sandwich, I felt the mayo overpowered it and all I tasted was mayo and not the great teriyaki flavors. I will definitely skip the mayo next time. I also didn't use the bacon & tomato. I was out of bacon and was afraid of pairing the tomato with the pineapple, but I might give it a try next time.

Grilled Mahi Mahi

This is just okay. I wouldn't make again. I followed the recipe, except that I used fresh garlic and only had to cook it 20 min. I should've know that dumping a can of tomatoes on it would not be good. I bought my Mahi Mahi fresh and what a waste of good money and seafood.

Strawberry Pina Colada Pie

I loved it! Not only simple, but the taste is so cool and refreshing. I used shortbread pie crust, coconut pudding and also put the coconut in the pie mixture. I used mandarin orange slices (from fruit cup) on top instead of strawberries. Orange, coconut and pineapple seemed a better fit to me than strawberries.

Garlic Chicken Stir Fry

This is one of the better stir fry dishes I have made. I only made small changes. I added mushrooms and instead of putting the ginger and green onion with the chicken and vege mix, I added it to the sauce instead. I made it easy on myself and sautéd all the veges together in olive oil. Once tender, I added the chicken for about 5 min, then put in the sauce mixture until it thickened. Excellent and so easy!!

After School Fruit Rolls

Wow! The taste is amazing! I'm not a huge fan of honey, so I used Agave nectar instead and used 1/2 tsp of McCormicks cinnamon sugar instead of plain cinnamon. I sliced it into pinwheels (like the picture shows), but it kept falling out when my kids tried to eat them. I will try to wrap it tighter next time, but probably just cutting in half would be better.

Authentic Louisiana Red Beans and Rice

Very tasty!! I'm not from Louisiana so I had no problem cheating and using canned beans. I used 2 cans of kidney beans and 2 cups of chicken broth. It boiled down nicely and still made the yummy "gravy". I cooked it for 1 1/2 hrs. I added 1 tsp of oregano and plenty of New Orleans Blend Seasoning salt & Creole seasoning instead of "cajun" seasoning. I also added the sausage in the beginning and didn't wait until the end. My 3 & 5 year old loved it. We had no leftovers, so I might have to double the recipe next time.
