Fresh Grapefruit Cake

The cake was good, although I agree with the other reviewer, it was kind of bland. It definitely needed to be iced. I made a simple icing from powdered sugar, a little butter, and fresh grapefruit juice -- with the icing, it was pretty yummy. It was also very crumbly, perhaps because I had to substitute for cake flour (1 cup cake flour = 2 Tb cornstarch in a cup measure - then fill to 1 cup level with regular flour). I made it in a bundt pan & it took about 50-60 minutes.

Yummy Couscous Salad

Definitely yummy! As you can tell from the other reviews, there are endless possibilities for variation, and they're all good! -- I added edamame, roasted red pepper, and cubes of cheddar. The leftover dressing was delicious on salad. The other reviewers are right -- just cook the couscous in the normal way, and it should only take ~5 minutes.

Tomato Pesto Batter Bread

Delicious! I only used about 1/4 c. sun-dried tomatoes (because that's all I had on hand), and there was plenty of tomato flavor. I don't think you need to use the full 1/2 c. in the recipe. I also had trouble pureeing the basil in my blender with so little liquid, so next time I'll try using a food processor instead.

Easy Bakewell Tarts

I liked the simplicity of this recipe, but somehow the simple idea turned into a disaster. The jam spread out to the edges of the muffin tins and beneath the pie crust, and glued the whole thing to the bottom of the (nonstick!) pan. They were impossible to get out of the pan without destroying them. The pieces of cake and jam that came out tasted good (it was just cake mix & jam, after all), but the pie crust layer was permanently left in the bottom of the tins. I've never had a problem with pie crust sticking like this before. I'm not sure if they should have been left in the tins to cool - maybe removing them immediately would help? Using muffin liners might also help, but it seems like they'd still be a mess to remove from the liners and try to eat.
