Fresh Grapefruit Cake

The cake was good, although I agree with the other reviewer, it was kind of bland. It definitely needed to be iced. I made a simple icing from powdered sugar, a little butter, and fresh grapefruit juice -- with the icing, it was pretty yummy. It was also very crumbly, perhaps because I had to substitute for cake flour (1 cup cake flour = 2 Tb cornstarch in a cup measure - then fill to 1 cup level with regular flour). I made it in a bundt pan & it took about 50-60 minutes.

Yummy Couscous Salad

Definitely yummy! As you can tell from the other reviews, there are endless possibilities for variation, and they're all good! -- I added edamame, roasted red pepper, and cubes of cheddar. The leftover dressing was delicious on salad. The other reviewers are right -- just cook the couscous in the normal way, and it should only take ~5 minutes.

Tomato Pesto Batter Bread

Delicious! I only used about 1/4 c. sun-dried tomatoes (because that's all I had on hand), and there was plenty of tomato flavor. I don't think you need to use the full 1/2 c. in the recipe. I also had trouble pureeing the basil in my blender with so little liquid, so next time I'll try using a food processor instead.

Easy Bakewell Tarts

I liked the simplicity of this recipe, but somehow the simple idea turned into a disaster. The jam spread out to the edges of the muffin tins and beneath the pie crust, and glued the whole thing to the bottom of the (nonstick!) pan. They were impossible to get out of the pan without destroying them. The pieces of cake and jam that came out tasted good (it was just cake mix & jam, after all), but the pie crust layer was permanently left in the bottom of the tins. I've never had a problem with pie crust sticking like this before. I'm not sure if they should have been left in the tins to cool - maybe removing them immediately would help? Using muffin liners might also help, but it seems like they'd still be a mess to remove from the liners and try to eat.

Welsh Tea Loaf

This was very tasty. I even accidentally overcooked one loaf, and it still came out moist and sweet. I used half chopped dates & half raisins because I didn't have enough raisins, and it was good. One note: this made more than two 9x5 loaf pans for me. I filled the loaf pans up to about an inch below the top (I was worried they would overflow), and I had enough extra batter to fill another mini loaf pan.

Salisbury Steak

Very good, nice consistency & great sauce. I made extra sauce like the other reviewers (more soup + flour). I also used crushed tomatoes instead of ketchup because we like the taste better.

Spaetzle I

These came out delicious, but I can't give it 5 stars because the method in the directions (pressing the dough through a colander) didn't work at all. Either the consistency is wrong (maybe it needs more water? I used the amount in the recipe), or you really need a special tool like a spaetzle maker. I tried a cheese grater as recommended by other reviewers, but that was an even bigger disaster. I ended up breaking off small pieces with my fingers (dipped in olive oil). It took a while, but it was delicious when it was done!

Orange Juice Cake

Good flavor, but texture was not pleasant. The orange juice mixture didn't soak through the cake, only about half-way (and I let it sit for a long time!). So the bottom half of the cake was soggy and greasy from the butter.

Easiest Eggplant

Very good! I agree with the other reviewers that the breadcrumbs could use some more flavor (next time I will try garlic powder, salt & pepper, Italian seasoning...). I didn't bother peeling the eggplant, so it was even easier and it came out just fine.

Graham Cracker Pudding Pie

Quite good, and VERY easy! I thought the crackers would get really mushy, but they didn't - they got soft, but kept their shape and look very nice in layers when you cut into the pie. I used 2 packages of instant pudding, like the other reviewers, and since they were smaller, it fit in a regular pie dish just fine. I did 3 or 4 layers of crackers, and sprinkled some crumbs on top to make it pretty.

Baked Pesto Chicken

Delicious! I used homemade pesto, and a spoonful of canned petite diced tomatoes on each piece of chicken, because I didn't have any fresh. Like the other reviewers, I marinated the chicken for a while. I think it would have been even better if it marinated longer - next time, I'll try an hour. I'll be making this for guests - it's so easy, and makes a nice presentation.

Seasoned Oyster Crackers

It works best if you drizzle the seasoned oil over the crackers while stirring them - otherwise the oil won't get distributed well.

Peanut Butter Popcorn

So good! It's very sweet; I think you could cut down on the sugar & it would still be good. I added quite a bit of salt as I was stirring it together, which helped bring out the peanut flavor.

Margarita Chicken CrockPot Recipe

Much too sweet. I would try again with only a tiny bit of honey, and lime juice instead of margarita mix. You can thicken the juices a little and make a nice gravy.
