Homemade Maple Syrup

Used 1 tsp vanilla extract in stead of maple and two tbsp butter. I think it was a bit too much vanilla for me. I also added about 1/4 more brown sugar to thicken it up a bit, but it didn't. I will definitely make this again and try the maple flavoring.

Beef and Fontina Tostaditos

The relish on top of the tostaditos was delicious. Very flavorful and fresh. I did not like the roast beef for this. After cooking them, the meat was very dry. I made these for a cocktail party but changed the beef/fontina combo and did a recipe that was for chicken tacos instead. Those were well received.

Downeast Maine Pumpkin Bread

I thought this was good. I think I was expecting a lot from the reviews. I did alter the recipe: 2 1/4 cups sugar, 1/2 c. applesauce in place of 1/2 the oil and 1/3 cup of OJ in place of half the required water. I only had nutmeg and pumpkin spice, so I used 1/2 tsp nutmeg and 1 1/2 tsp pumpkin spice. This needed more spice. Next time I'll try sticking to the spices listed on the recipe. Or add a bit more. I'd also have used more sugar. I would've liked this a bit sweeter. I still ate a lot. Took this to work for a potluck and generally people liked them. They were definitely moist.

Chicken Fettuccini Alfredo

WOW! I've tried Fettuccini Alfredo many times, but this is the absolute best. I followed recipe exactly except I used the shredded Italian blend cheese instead of the two other kinds of cheese mentioned. I think I put too much because it was very thick. But it was so yummy! I will definitely make again.

Egg Fried Rice

I only had regular rice so I added more water and a bit more soy sauce and increased the cooking time. I didn't have green beans so I used soybeans instead. Really liked the recipe. Will definately make again.

Aztec Casserole

This was so easy to make! The only thing that took a while was shredding the chicken. I put some enchilada sauce on bottom then spread half the chicken mixture over and a little more sauce then the next layer of tortillas and some more sauce and then the rest of the chicken. Finished with a little more sauce on top. It was so yummy. I added a little cilantro on top before serving. My husband acutually had it the next day and he NEVER eats leftovers. Served it with the Mexican Rice III someone else suggested. Will definately make again!
