Reviewed: May 31, 2014
I was leery about making my own bread. But this was super easy and tasted really good too. Shared the recipe with a friend. The family liked it also.

Strawberry Dream Cake II

Reviewed: Jun. 3, 2011
I rated a 4 because I based my recipe on this one. I do not use box mixed cake. Instead I used grandma's recipe and I used a little over a pint of strawberries, pureed and used that instead of the oil. Fantastic without the fat! My use more strawberies next time. I tried finding a recipe with out gelitin, first because I din't have it, and second, I thought was was the point of it. I even added some strawberries to the icing. I didn't have the pecans. Thanks so much for sharing your recipe.

Chocolate Peanut Butter Bars I

Reviewed: Feb. 5, 2011
I gave this a 4 because everyone I served this to liked it. I don't know if it's because I used a glass baking dish, that my pastry layer needed more time. I left it in 12 minutes and then 5 minutes more. It should have been in 5 minutes more because when I went to spread the peanut butter, it tore up the cookie. But maybe that way my fault it wasn't spreadable because I used crunchy peanut butter instead of creamy and nuts, although I did use the whole jar. Then the chocolate did not melt and I left the oven on while doing this since my pastry level fell apart. Next time I will melt chocolate seperately, then spread on top.

Did not like this at all. Added spices and still did not help. Maybe I did something wrong.

Pumpkin Roll Cake

Reviewed: Nov. 21, 2010
I did not make this, however it is very close to the recipe I have. Over the years I have tried many different ways to bake and roll the cake. I use parchment paper as it does not stick and there is no need for cooking spray. I take my spatula and spread my pumpkin mixture to the ends of my wilton baking sheet and then tap it on the table, or counter, and fill in where necessary. I roll by using a hand towel covered with powdered sugar. Wait 20 minutes unroll and fill with cream cheese mix and roll back up and get it into the fridge. Hope this helps.

Red Velvet Cake I

Reviewed: Jun. 21, 2010
I gave it 4 because my husband ate it. He didn't tell me it was great. I used 3 tbsp Cocoa and 1 oz red food coloring. When I was rinsing the bottle I decided to add a little red water to the paste, because I know me and I would have never gotten that to mix. I did use oil and not shortening.

Chocolate Covered Easter Eggs

Reviewed: Apr. 25, 2010
This was a great recipe as this was my first time. I will skip the chocolate next time as they just crumbled into bits (unless someone has a suggestion that works). The peanut butter eggs were double the size of the others. Good for me (the inside is my favorite part). Will definately make again.

Chewy Granola Bars

Reviewed: Sep. 16, 2009
I love how you can add or subtract what you want and it still comes out delicious. Kids eat these faster thatn store bought. I do use 1 cup butter and honey. I only use 1/2 cup chocolate chips. The other 1 1/2 cups is other stuff. Otherwise way too sweet. I also use rolling pin (daughter's smaller one) to skwoosh together before cooking. I also roll it again as soon as it comes out of the oven. Wait 10 minutes, cut it and then let it cool completely. Easier to cut that way.

Buttercream Icing

Reviewed: Jun. 4, 2009
This is very similar to a recipe I got in a cake decorating class. The class ingredients were 1 cup shortening, 1 teaspoon extract of your choice, and using water instead of milk. I use butter extract to get the butter flavor without the yellow butter color (hard to control when coloring icing), and also to not get that sugar cringe when biting into it. Also if you use water and shortening, there's no need for refrigeration.

Cake Mixes from Scratch and Variations

I made cupcakes. My husband couldn't stop eating them. I used 1 1/2 c milk and 2 c sugar and oil instead of shortening. I unfortunately do not own a sifter, but they came out really good. I am going to make another batch right now.

Chicken Breasts with Lime Sauce

Reviewed: May 6, 2008
I didn't have any bread crumbs, or oats (which I usually use for a substitution), but what I did have was a package of the ChiChi's corn cake mix. I coated the chicken with that. While my daughter first said, what's that funny taste, I've never seen her eat so fast before (except for sweets of course).

Cabbage Roll Casserole

Reviewed: Jul. 17, 2006
I followed the recipe and tried to cook everything in one pan. I tried to have the weights the same, but everything did not fit. It cooked out into my oven. The rice was also not done and it didn't taste very good. I don't like instant rice so I will try this again, I like that you don't have to roll. But I think i will either soak the rice or pre cook it, and place it in two pans instead of one.
