The Best Zucchini Fritters Ever

Zucchini Brownies

I used 1/2 whole wheat flour; you'd never know it. I didn't frost them, but I served them with whipped cream on each brownie. I used summer squash instead of zucchini, and I happily froze grated squash from the bumper crop to make more. Much yummier than any zucchini bread in my opinion.

Black Bean Brownies

I went a little heavy on the cocoa powder, a little heavy on the oil and I shaved a dark chocolate candy bar on the top. This reminds me of a flourless chocolate cake from a fancy restaurant. I don't think I shall ever make brownies using flour again!

I had a plain (no sugar or flavors) drinkable lowfat yogurt smoothie on hand, so I used it in lieu of buttermilk. Excellent results.

Scrumptious Strawberry Shortcake

I used 2 cups of all-purpose flour, and substituted the 3rd cup with 1/2 cup whole wheat flour and 1/2 cup of cornmeal. I used whole milk instead of cream and I think the mix was a little wetter that way, so I spread it in a 13X9 pan instead of kneading and making separate biscuits. Oh my, it was so delicious. This is my forever shortcake recipe.

Blushing Cranberry Pears

I added 1/4 cup or so of rum to the liquid. After the pears were cooked I simmered the liquid more in order to thicken it as another reviewer had suggested. To serve, I poured the hot liquid over the pear and topped it with blueberry ice cream. So good!

Apple Crisp II

good recipe. My apples happened to be a little dry(been sitting around a while,) but since I had some apple cider in the fridge, I added some to the apples before baking to sort of reconstitute them.

Buttermilk Pancakes II

I made 1/3 of the recipe for a small breakfast that served 3 people. It was easy to reduce. I used all whole wheat bread flour and a couple tablespoons of whole oats for a nice texture. I increased fluids and baking powder slightly, and I used oil instead of butter. This is my new pancake recipe. I will be trying it in the waffle iron on Saturday!

Easy Sugar Cookies

These cookies were great! I took another reviewer's advice and made sure that the butter was thoroughly softened before mixing it with the sugar. What I did was take the butter out of the fridge, cut it up into slices, placed the slices in a bowl, and stuck the bowl in the microwave for a few seconds. The cookies came out perfectly - soft, warm, and not crumbly at all. I don't think there is anything you need to add or subtract! They were even in the fridge for a while, and I put them in a toaster oven for a minute or two... they came out just like new! I would like to try them with sprinkles on top. The family says that they are "Santa's favorite cookies."

Irish Potato Farls

I made the recipe using whole wheat flour, and it worked fine. I used the onion powder suggestion. I also cooked the potatoes in chunks with the skin on; it peeled off easily. Great on a cold day. We had them with sardines.

Coconut Macaroons III

I used an air-bake cookie pan, so the danger of burning was small. I took the suggestion of greasing and flouring; that worked well. Dipping the fingers in water when forming the cookies was a good idea too. I cooked them a little longer and at 345, and I also made them smaller so that more of the coconut area would brown.

Beef Fried Rice

I used brown rice that was leftover from the day before and I added garlic. Next time I may add cooked zucchini or some other vegetable. Everyone in the family loved it! Thank you.

Buttermilk Corn Bread

Chinese-Style Broccoli Salad

It is a good recipe that I will make again. My only confusion was the amount of boiling time. It took more than a minute to come to a second boil. I let it go 90 seconds. I will only let it go 1 minute next time even though it does not heat enough to boil after the broccoli is added.

Salmon and Potato Pie

I broiled up some fresh salmon for this recipe. I thought my potatoes were small, but I only used 4 of them. I used fresh sage since I had it. It reminds me of a potato knish. p.s.(While baking this, I separately baked the potato skins in butter, added cheese and salmon and salt browned it and served with sour cream for an appetizer!)

Knishes

I make the dough to use with leftover mashed potatoes. I then add onion, cheese, and either spinach or brocolli which I drain and squeeze very well to get the liquid out. I roll the dough very thin and sprinkle with paprika before baking. I cut circles and shape individual servings. They reheat well in oven and I imagine they would freeze well.
