Pesto Sauce

Reviewed: Nov. 23, 2010
Made 2 batches. One with pine nuts and the other with walnuts. I blanched the basil leaves for about 45 seconds before processing with the other ingredients. It keeps the bright green color of the pesto, instead of the browning that occurs.

My husband loved this one! We had it at Thanksgiving and he asked for it again at Christmas. The flavors just go well together.

Yummy Blueberry Cobbler

Reviewed: Jul. 4, 2012
Loved it!! I'm not necessarily a desert person, but oh my, this was wonderful! I used frozen blueberries & reduced the water to 1/2 c (as was suggested), as well as cutting the sugar to 3/4 c each part (as also suggested) and added the cinnamon (as was suggested). Yummy with vanilla bean ice cream!!

Kathy's Delicious Whole Slow Cooker Chicken

Reviewed: Nov. 23, 2010
Easy! Put it in frozen and took the innerds out after about 2 hours in the crockpot. The chicken was in the crockpot for about 4 1/2 hrs on high. Used the left-overs for teriyaki chicken & rice the next night.

Amish Breakfast Casserole

Reviewed: May 8, 2011
Good, but salty. Don't add the salt. I liked making it ahead and freezing it so I could pull it out for Mother's Day. I want to try it with sausage next time.

Roasted Tomatillo and Garlic Salsa

Reviewed: Oct. 17, 2009
Loved the spiciness to it. The flavor was excellent and I used the left over salsa to make a green enchilada casserole, which added to the flavor of the casserole immensely.

Spinach Cheese Manicotti

Reviewed: May 9, 2009
I've made this both with cooked manicotti and without cooking the manicotti first. Both worked out great! I even froze half the recipe and cooked it a couple months later, which tasted just as good as the original batch. Highly recommend.

I made this for a dinner party and the broccoli was an amazing hit! The flavor was just perfect! It makes you believe that even those who don't like broccoli would still enjoy this recipe. Loved it!
