Pesto Sauce

Made 2 batches. One with pine nuts and the other with walnuts. I blanched the basil leaves for about 45 seconds before processing with the other ingredients. It keeps the bright green color of the pesto, instead of the browning that occurs.

Kathy's Delicious Whole Slow Cooker Chicken

Easy! Put it in frozen and took the innerds out after about 2 hours in the crockpot. The chicken was in the crockpot for about 4 1/2 hrs on high. Used the left-overs for teriyaki chicken & rice the next night.

Cream of Mushroom Soup I

Flavor was wonderful! Used Chanterelle mushrooms. Seemed a little thick, so added about 1/2 cup 1% milk. Add spices to your own tastes.

Roasted Tomatillo and Garlic Salsa

Loved the spiciness to it. The flavor was excellent and I used the left over salsa to make a green enchilada casserole, which added to the flavor of the casserole immensely.
