Angel Hair Pasta with Garlic Shrimp and Broccoli

We just had this for our dinner and thought it was great. Next time I think I would make half again as much or double the sauce. I cut back on the salt and what we fixed lacked salt so I will add most of it in next time. This is a keeper, we loved it!

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

I made this for a special dinner when my son came home from college, which he hardly ever does, so I wanted something special for him. It was a HUGE hit, we both loved it and he deemed it a keeper! (Even though he winced at the spinach)

Maritime Blueberry Buckle

This was very good except....the butter in the topping made the top of mine greasy, with puddles of butter. I've made a note to not use butteer in the topping next time.

Chocolate Refrigerator Cookies

I had been looking for a recipe for these cookies since my sister and I can't locate the one our deceased mother used when we were little. the changes I made to make this "mom's" recipe: I only had dark brown sugar so used that. I used a stick of butter instead of shortening. I used two squares of semi-sweet chocolate to give it a sweeter and more chocolatey taste. These are good cookies, unfrosted, with the above changes!

Flourless Peanut Butter Cookies

I first received this recipe a few years ago from a friend with Celiac Disease. These are delicious but I make mine with dark brown sugar, 1 cup. They are a huge hit, Celiac Disease or not, they are great and so easy to make!!

French Silk Chocolate Pie I

Two years ago my son, now 10, and I searched for the perfect chocolate pie recipe. We tried over ten different recipes, some went to the magpies after the first bite, but this recipe is the one we repeatedly came back to and the only one we use now. It is so easy and so good, the beating of the eggs for a whole 5 minutes is the key to a fluffy pie.**We have made a few changes to this recipe. We add another 1/3 to the pie ingredients. We make a chocolate graham crust and top it off with whipped cream that has had powered sugar and cocoa added to it.
