Easy OREO Truffles

UGH. Never again. It's not worth the trouble and mess it makes in the kitchen for a couple dozen fairly mediocre tasting truffles. Dipping the truffles in chocolate was incredibly tedious and annoying because there's no way to get them from the bowl onto the tray without them either flipping over and exposing the unchocolated underside (was using a fork to lift them out of chocolate) or falling apart in the bowl, even after I refrigerated them for 15 minutes prior to dousing them with chocolate.

Hard Boiled Eggs in the Oven

I used brand new eggs that I bought TODAY to make these. I know you're supposed to use 5+ day old eggs but I was impatient. And let me tell you...these eggs were a breeze to peel. Only one egg had some difficulty and some of the membrane pulled off some egg but no big deal, I'm not making them for a cocktail party! I have a brand new oven so the first batch I baked for 27 minutes at 325 and they were hardboiled but the yolk had the slightest bit of moisture in them. I prefer FIRM hard boiled eggs. So I readjusted to 29 minutes at 350 and they came out perfect! Firm and the slightest bit bouncy. Since you have to transfer them to a bowl of ice cold water, just peel them under the water and it'll be easier. This is how I'll make my eggs from now on. Mess free, no huge pot of water to haul around the kitchen. :)

Watermelon Pops

Tastes great, don't get me wrong. Of course Jell-O and cream cheese tastes good. But I'm not reviewing this based on the flavor. It's been 5.5 hours and maybe 20% of the entire popsicle is frozen. The rest is stiff Jell-O. Not even the cream cheese is freezing right. I let one popsicle sit in hot water for 5 minutes and the red jell-o still fell off in the cup. I used plastic cups too, thinking the Jell-o should slide right out. Nope. Too much work for something so hit-and-miss. Now I'm eating half-frozen Jell-O in a cup with a spoon.
