Fajita Quesadillas

I used fresh chuck tender steak which I marinated in a blend of 1/4 c veg oil, 1 Tbsp vinegar and a few tablespoons of fajitas seasoning (in ziplock bag for several hours.). We grilled the steak and sliced it into very thin strips. I sautéed the onions,and peppers until half way cooked then added a cup of sliced mushrooms and continued to sauté the veggies. After cooking the quesadillas as suggested, I sieved them with sides of sour cream, avocado and salsa verde as options. I used the large flour tortillas which were too large and not as easy to flip over. I will remember to used the smaller 8 inch tortillas. This made two large quesadilla. Will make this again.

Sarah's Applesauce

Unbelievably easy. I had a recipe for Tropical Grilled Pork Chops. (See Allrecipe....so delicious!) but did not have any canned applesauce so made some with Sarah's Recipe. Perfect and obviously a lot healthier. I did drain off most of the water used to cook the apples before mashing them!

Greek Green Beans

These are the best Greek Green Beans (Fasolakia). The secret is to give them plenty of time to simmer to really fuse the flavors. I cook them for at least 60 minutes. I used i large onion (diced), a bit more garlic (3 cloves, diced) and 1 can of diced tomatoes with garlic and basil. A good tip is to add a good glug (maybe 1/3 cup or so) of red wine the last 20 minutes of simmering. I serve them with roasted lamb from the grill and crispy oven roasted potato wedges.

Chinese Pepper Steak

The beef was very tender. I tasted an oily taste when eating it. Oil too much or too hot in my wok? I cooked the beef first, removed it and cooked the onions and peppers then added the beef back to the wok.

Chicken and Red Bean Enchiladas

This was a nice spin on an old favorite. Some changes I have made... I grilled chicken breasts and shredded them and instead of tomato sauce I use a can of enchilada sauce and simmer it with the sauteed onions and broth. My family prefers the kidney beans to be slightly mashed but a little chunky. Another portion of a can of enchiladas sauce may be needed for the top with shredded cheddar cheese added the last 5-8 minutes of baking.

Chicken Salad with Bacon, Lettuce, and Tomato

I have made this salad twice now this summer. Both were hits. I have to admit, I hate it when writers say how wonderful a recipe was only to say they made all these changes but here I go. I love the addition of bacon to the salad but I really like to add fruit to give a sweetness and a variety of textures. I added sliced green olives, sliced red grapes, pineapple and walnuts. The lemon and Worcestershire sauce gives a nice zing. My Bunco and Beach friends were very complimentary. Thanks Brit!

Pineapple-Lime Rice

Great flavors...I used white rice but the liquid was not enough to cook the rice. I questioned the amount b/c the box calls for double the liquid to the amt of rice. I had to add mor as it cooked. Will try it again though!

Key West Chicken

This wasn't bad but couldn't give it rave reviews. The chicken was very tender, though. I didn't taste much lime. It was more of a sweet barbecue taste.

Pork with Peach and Black Bean Salsa

The pork was unbelievably tender. I used a Boneless Sirloin Roast. I don't know if browning it with the corn meal was the secret. The cornmeal stuck to the cubed pork so well. I did have to use 3-4 tablespoons of olive oil vs the recipe's 1 Tablespoon. This meal was as pretty as it was tasty, and it was equally as good the next night for leftovers. I have made this several times. We really enjoy it.

Pesto Turkey Burgers

I always want to try a good turkey burger recipe. This one is pretty good. It has great flavor and the bread crumbs help to hold it together yet remain juicy. I did not add any of the salt as I felt that was way too much. I used only 1/4 c. of seasoned bread crumbs. Grilled with a little mayo, lettuce and tomato....it was yummy.

Ultimate Twice Baked Potatoes

I served these for Christmas dinner with a wonderful beef tenderloin They were a big hit. I liked them b/c they were so easy to make ahead of time. I sprinkled jarred bacon bits on top after discovering I didn't have sliced bacon. That make it really easy.

BBQ Feta and Hot Banana Pepper Turkey Burgers

This has become one of our favorite turkey burgers. I only gave it 4 stars because I have altered it some to our likings. I make them with 1 lb gr turkey, 1-2 chopped pepperoncini, 5-6 small roasted peppers (chopped), 1/2 lb feta crumbled, 7-8 chopped calamata olives. When grilling, make a well in center of burgers. Spray grill w/ olive oil before placing burgers on .

Russian Mushroom and Potato Soup

I made this for our Progressive Dinner Group. It was a hit for sure. To double the recipe I used 5 lbs of cubed potatoes (10-11 cups), 4 carrots, 3 large leeks, 2 containers of sliced bella mushrooms,2-48 oz boxes of chicken broth, 2 c of 1/2-1/2 and 3/4 c. flour plus double the spices.

Mom's Best Meatloaf

Just made this today. I used 1 lb of ground turkey, 3/4 c of fresh bread crumbs, 1/8 c of oats and corn meal. The rest remained the same. The BBQ sauce and the liquid smoke was a nice touch. After reading that the posters thought it was very moist and hard to get out of pan--I lined the loaf pan w/ sprayed foil which made lifting it out of the pan very easy. My husband likes brown gravy w/ his meatloaf so I served it w/ one of those envelop gravy packets. We really liked it and being turkey--it was healthier.

Penne Pasta with Veggies

The picture looked so good we had to try it. I was concerned that since it didn't have a sauce it would be dry but it was light and full of flavor. I used diced salami since proscuitto tends to be pricey. It worked great... I used one jar of sun-dried tomatoes with the oil. Also instead of a bell pepper I used jarred roasted red pepper (added to the salami and sundried tomatoes). It was a pretty dish coming out of the oven.

Chicken Pesto Paninis

This was a very simple meal that was well enjoyed. I shall make the orginal someday soon but varied it by what I had on hand. I used hogie rolls with the top sheared off; 1 pregrilled sliced chicken breast; sauteed onions and green pepper; pesto; feta cheese--grilled. Simple and yummy.

It was good but why o why would you add that much red pepper flakes? I only put 1/2 t., and it was still too hot. I used mussels and shrimp and served over thin spaghetti.

Pepperoncini Beef

A very tasty sandwich for sure. I used posters' suggestions for 1 bottle of beer, 2 beef boullion, 1 pkg dry italian dressing,and 1 1/2 onion sliced. With only jarred chopped garlic on hand, I made lots of slits and pushed in the chopped garlic. I was a chicken and used only 8 oz of pepperoncini, sliced. I think I could go with more next time. It took a long time to cook so it would break down. Plan on at least 8-10 hours. Once it is shredded, put back into the pot and stir it around in the juices. Simmer for another 1/2 hour or so. It was so juicy. Add some provolone!! Yum!
