Key West Chicken

I only marinated the chicken for 30 minutes and while the chicken was extremely juicy, the flavor wasn't really there. May try again after marinating longer - the slight flavor was promising.

Sweet 'n' Hot Glazed Salmon

YUM!!! I made some modifications to this recipe, to the point where it's not exactly the same recipe, but I wanted to give credit for getting me on the right track. Basically, I omitted the apricot nectar and the dried apricots and the cinnamon, and kept everything else as is. The smell of the marinade as it was cooking was overpowering, and I thought t might be too much, but paired with the fish it's perfect. Keep a watchful eye, however - the glaze baked onto my foil-lined sheet and set off my fire alarm. Yikes!

Sandy's Chocolate Cake

WOW!! This cake is outstanding. It's dense and extremely moist, and holds a ton of chocolate flavor. I made it for my mother in law's birthday, and even those who claimed they didn't like cake LOVED this cake. Will absolutely add this to my recipe collection. Thank you!

Cathy's Banana Bread

I thought this recipe was bland, even after I added cinnamon, ginger, and cloves. The consistency was more like a cake than a bread. I still give it 3 stars because it wasn't bad, and even as I type this, I'm craving another slice. Funny how that works!

Eclairs II

These had a really good flavor. However, I made 9 shells (since the recipe said it makes 9 servings) and each eclair was extremely tiny - probably 3 bites in all. Also, they didn't puff up, and I had to scoop out the insides. One reason I chose this recipe was because it didn't instruct me to scoop out the insides, so I figured I should expect hollowed out shells. I baked them until they were golden and well done, but they still did not hollow. The filling recipe yielded way too much, so I made another batch to use it up and I still could have made two more batches to use up the filling. Overall, I liked the flavor a lot, so with a little tweaking this can be a great recipe.

Cream Puff Cake

I love this recipe. The only variation I made was to heat a few blocks of baking chocolate, powdered sugar, milk, and vanilla on the stove and pour that over the puff part before the cream cheese filling goes over it. I highly recommend this recipe!
