Chef John's Dutch Babies

Everyone in the family liked this. I couldn't find my cast iron pan, so cooked in ceramic. Might be why it was denser than I expected.

Kris' Amazing Shredded Mexican Beef

Classic Bran Muffins

I wish there was a rating higher than five. I love these so much. I just made them for the second time this week. I am going to need to buy more bran! I have some picky eaters in my family who don't like raisins, but I still wanted the sweetness, so I pulsed the raisins with the bran in the food processor until I had a crumbly mixture. I also added pecan chunks. Its also good with shredded carrots added.

Chef John's Pumpkin Cinnamon Rolls

I loved these, but I made three kind of major changes. The first is that I didn't butter my baking dish. I used parchment paper. I know, some people would hate this, because it takes away some of the richness, but the brown sugar still carmalized, and I would probably do this again. Second, I had some left over flour mix, half corn meal, half almond meal. I used this when I rolled it out into the large rectangle. It's a great mixture for rolling. Third, the icing - I wanted it a little thicker, so I put 8 oz of softened cream cheese in my stand mixer with 2 cups of powdered sugar and mixed them well. I started to add milk slowly, to get the thickness I wanted, but had a crazy idea - the heavy whipping cream. I started adding that instead, and then mixed on 8 until glossy. The result was the most luxuriant, delicious frosting I have ever made. Everyone in my family loved it, and I will for sure be making this frosting again.

Jay's Signature Pizza Crust

Turned out too dry and crusty. I pre-baked for ten minutes as someone suggested, and I put it on the bottom rack as someone else suggested. Next time I will just follow the recipe. 3 stars for now. I'll update if it turns out better next time.

Chef John's Make-Ahead Turkey Gravy

Everyone loved this when I served it up yesterday with Thanksgiving dinner. I made it the day before, buy only used half the recommended liquid, ending up with a thick pudding-like consistency. When the turkey was done, I pulled out my "gravy pudding" and whisked it with the juices from the turkey - about five cups of it, and then brought it to a simmer. Everyone at dinner commented on the great flavor.

These are pretty good. I "practiced" them before thanksgiving, and they aren't the recipe we'll use, but we will probably eat them all. Pretty big recipe, though, so maybe not.

Red Lentil Curry

I'm not crazy about lentils, which are still a prominent flavor in this dish, but the spices nicely offset the lentil flavor. I also noted that the left overs tasted better the second day.

Hot Tamale Pie

Loved this! So did everyone else in my family. I replaced the salt and chipotle peppers with two cubes of Knox chipotle bouillon, because that was what I had, and I also used canned corn, well drained. Still awesome!
