Mexican Style Shredded Pork

Beautiful. This versatile recipe will be in my cookbook for life. Perfect as suggested and the product is very good over rice, as well as in tacos, etc.

Grandma's Pork Chops in Mushroom Gravy

Recipe came out great, thanks to my meat thermometer. As mentioned earlier, the cook time for this is too long. I also used flour to thicken instead of corn starch, as I don't like clear gravy. We liked it, and it is now in the rotation.

Tangy Spare Ribs

This was fantastic. I am never crazy about anything that is too sweet, and this was just right for me. A nice way to get away from the same old BBQ sauce.

Roasted Tomatillo and Garlic Salsa

Wonderful! I used two jalapenos, but will do one next time so it will have heat that doesn't get in the way of the flavor. Can't say enough about this one. Only change I made was to do more of a roast (400 degrees for until "roasted" looking, then broil to brown well). Perfect. Two of us killed this in about 2 days.

Green Risotto with Fava Beans

This is a great, non-tradtional dish. As far as risottos go, however, I make others which I much prefer. A keeper, but not something I'll crave.

Cornmeal Waffles

I really wanted to like this recipe. Unfortunately, I can't. On paper, it has everything that I think I want from a waffle: low fat content, novelty, whole grains, etc. Perhaps this healthy combo just can't produce 5 star waffles. This recipe works as described and functions well. I like a lot of things about it. I like everything, in fact, except the waffles. They are ok, but I'll pass in the future. I will be tempted to fiddle with the recipe and try other grains, etc. I think this recipe is a great place to start.

Salmon With Scalloped Sweet Potatoes

This came out really, really well for me. I will definitely be using this one as a standard salmon recipe. The potatoes were excellent, too. I think I used a little more ginger than was called for, because I like it, and it seemed just right to me.

Beer Butt Chicken

This is an easy, great tasting, and fun recipe. My fiancee likes fancy fixins, but I do more of a "home style" approach. Anyway, this suited us both. I made this in the oven, in a rectangular pan, since it's winter in Chicago. Three words for simplifying the balancing problem others have complained about: Heineken keg cans. They have a nice wide base and short profile. I had no problem getting the 5lb bird to stand at attenion. Try it!

Herb Roasted Pork

Pork was very good, but the glaze was way too sweet for me, which results in the loss of a star for this recipe. When I fiddle with the glaze a bit, this may be a 5 star.

Rosemary Turkey Meatloaf

Four stars as described, but five with about half as much brown sugar (too sweet). It takes a couple of pieces, though, before the sweetness becomes too much. A keeper, for sure.

Sloppy Joes II

This is pretty good, but I think my store brand ketchup didn't help things. Also, I rarely use beef, and with the ground turkey, this recipe came off a little too sweet for me. Next time I'll omit the brown sugar.

Nana's Acorn Squash

This dish is better than eating an unadorned acorn squash, but not much. It was extremely easy, though, which adds a star or so, in my estimation. Maybe a little kick (cumin or cayenne... chili powder?) would help this dish.

I cut the pitas into long strips and then halved them. Also, I used Italian seasoning instead of chervil. Otherwise, followed the recipe exactly. Came out perfectly. Highly recommended.
